I always make the Rotel/Velvetta Cheese dip around the Holidays.  I'm looking for a Queso Dip Recipe that is similair to what the restaurants serve.  Would you please share your recipe for Queso with me?  We don't like really "hot" dip.

yeck, Velveeta is poison! I would not even consider it cheese! It may taste good but the ingrediants are terrible. :( Sorry to get off topic lol. Carry on..

Very very true.. but it's easy and tasty.   

I'll agree with the tasty part, in my former days I would have eaten it but I won't touch it now! No processed foods for me in almost a year and I feel amazing! :)

I thought this sounded pretty good.

?1 Tbsp cooking oil (veggie, olive, canola - whatever you have)
?1/4 cup white onion, diced
?1 large jalapeno or serrano, seeds and stem removed; diced
? 12 oz white American cheese (I have the deli give me 3 slices on 10), shredded
?4 oz Monterrey Jack cheese, shredded (optional; don't use pre-shredded)
?1/4-2/3 cup cream, half-and-half, or whole milk

?1 roma tomato, seeds removed and diced

? 1 small bunch cilantro, roughly chopped


Instructions

1.Heat the oil in a saute pan. Cook the onion and pepper until softened and reduce heat to medium-low.
2.Add the shredded cheese and 1/4 cup of the cream. Stir until mostly melted.
3.Add the tomatoes, cilantro, and additional cream a little at a time until you reach desired consistency.

Here is one :) I know the mayo (I use the real mayo with no corn syrup) and cream cheese are fattening but don't have the sodium and other bad stuff that velveeta has. Good luck!

Creamy White Queso Dip
Creamy, cheesy perfection with no Velveeta!

Ingredients:
2 8-ounce packages cream cheese, softened
1/2 cup mayonnaise
2 cups grated Monterey Jack cheese
2 cups grated Parmesan
1 can Rotel Diced Tomatoes with Green Chiles, drained
1/2 teaspoon salt (I use sea salt)


Directions:
Preheat oven to 425 degrees.
Add all of the ingredients to a large bowl and mix well to combine.
Spread cheese into an 8x8 baking dish and bake for 20 minutes or until hot and bubbly.
Serve with tortilla chips.

This sounds delicious also! going to have to try it! Looks even healthier than the one I recommended. :)
