Lots of barrel races, ropings, cutting around Stephenville.... Dublin is about 15 miles west of S'ville.  A person can go to some type of horse event 6/7 days a week in this area.  I know there are lots of horse related stuff over on the east side of Texas too.  
Weather- Dublin area is drier than Sulphur Springs as far as rain fall.... SS is on the east side of Texas while Dublin is more central.  S'ville is considered the cowboy capital of Texas I believe.  Depending on career both area are nice.  Dublin is approx.. 100 miles southwest of the DFW area and I would say SS (I-30) would be about the same miles except northeast so you're not so far away for lots of big city entertainment.
You could google both towns get more info.

 I grew up in Sulphur Springs and I now live in Emory, 20 minutes from there. You can find jackpots 2 or 3 nights a week within an hour and spring - fall there are barrel races every weekend within an hour. Its a very ag based community, dairy farms and chicken houses are a big thing. Its hot and humid in the summer and cold and wet in the winter. But I love this area and couldnt imagine being anywhere else. SS is 80 miles east of Dallas. And is is growing and a lot of business are going up right now.

So when you say hot, how hot does it get? I've pretty much lived in Idaho my whole life and it gets to be around 100 sometimes 105, but it does cool off well at night. How the horses handle it?

 There are a lot of 100 degree days during the summer, the problem is the humidity. Most everyone I know either rides early in the morning or when the sun goes down, its way too hot during the middle of the day in june-august. We have snow usually once MAYBE twice in winter. But it never sticks for more than a few days.

Yes there are rolling hills and trees here in Stephenville  I moved here from Oregon and I love it! It does get hot and humid here for a couple months in the summer, but the winters here are better than the winters in the northwest. We do get severe thunderstorms here. Tornadoes are rare but possible, so you need to be educated about them and have a plan. Agriculture is strong here, mostly dairies. And there's LOTS of rodeo people! Cost of living is substantially cheaper here than where I'm from in Oregon. I don't know anything about Sulphur Springs though, so I can't help you on that one. But if you make it to Stephenville, come say howdy!

 now this is the truth on trees...SS will have lots of big pine trees 30'-50'+ tall long needle type along with scrub brush, Oaks and Ceder trees/bushes.  S'vill have live oaks 20-30', cedar/oaks, scrub brush, mesquite (which I hate), cactus (hate that too), sage and various other stuff- you'll find more rocks on this side too.  East side of Texas is very lush compared to this side- there is a very different land foliage between the 2. Seems like there is a define line I-35 that runs north & south for vegetation.
Plus I think east side gets way more rain that us.  I can hook you up with a hay producer, although there are lots of them, in Desdemona that is close to Dublin.

This is true.  I live over near Tyler and we have a LOT of trees.  Rolling hills and trees, trees, trees.  I don't consider what Stephenville has as trees.  Of course, I come from California so what I consider timberland is not what East Texans think of as timberland (though I have grown accustomed now).

I honestly prefer east texas over the closer to central texas area.  However, you mentioned a dairy operation.  Stephenville and closer out west is WAY more suitable for dairies than East Texas.  I finance dairies, in particular mega dairies, and have heard lots of conversations regarding milk production and cost to produce.  East Texas is not the place for a dairy really.  Keeping a cow producing in dry heat is WAY easier than humid heat.

Thanks everyone! I really appreciate all the first hand experiences! Its hard to really get a feel for it from Google lol. I see someone mentioned Oak trees... do the horses have any problems with them? I lived in Northern California for a few years and it seems like all of my horses came down with some sort of allergic reaction to the oak. Cost of living seems a lot lower in Texas then it is here and I'll be looking forward to that! What do hay prices run? We will be looking for property with acreage so I was hoping to have some grass for the horses to.

I live in sulphur springs. We used to have lots dairies not many left anymore. Lots hay and grass and trees. Mostly oak trees but have never had problems with horses. Hay price reasonable. Not much competition as far as barrel races but within an hour there are plenty.

I moved from Idaho to Weatherford a few years back and this was my experience with my horses - the summer was hot and humid I suggest you move them in the spring or fall so they adjust better (personal thought though) as for races ebarrelracing.com put in your zip and boom your in business - the V'ille has a race once a week and a big one every couple of months - Waco's not that far they have big ones as well so does Glen Rose - there Jurassic Classic is coming up the end of Feb they also have one in Nov called running for cold heart which is a memorial race --- this area by far is my favorite part of texas to live - I lived in south texas (san Antonio area) not nearly like the DFW area. The is also a publication you can pick up at Teskeys (Weatherford) or most any feed store around that will tell you the races that are weekly ... you will not want to come back to Idaho after you move to texas they don't have near the events this state puts on.

Good information! I'm honestly looking forward to getting out again. I haven't been to a race in a few years because they are few and far between. I showed cutters for a few years too and would love to get back into it. Where in Idaho did you live? I'm in southern Idaho.

 That's true. Stephenville doesn't have big timber, but depending on what part of Idaho the OP is from...Stephenville may well have MORE trees than the OP is used to.

Well unless you can count sagebrush and pivots as trees then we have a bunch! Lol one more question...how do you plan for a tornado? I've been in some bad lightning storms, but the weather here is quite boring compared to what I see on the news....

just have to rely on the weather channel - I've lived in S'ville area for 8 years and only have heard 2/3 times of tornado warnings.  
I was born here in Texas on the coast and have been thru 3 hurricanes when I was younger,  then I lived in California for 33 years was thru 2 bad earthquakes and lots of rollers. 
I rather live here than have to deal with earthquakes- although I miss the weather and ocean of California.
