    Location: NE Oklahoma | I really like the Velveeta casserole/skillet meals. They are simple and quick, just have to brown your ground beef or chicken first- my go to one is the Chicken & Broccoli with orzo. I add in frozen mixed veggies instead of the packet that they call broccoli lol. Zataran's jambalaya mix is another good one. You can use sausage, chicken, or shrimp for your meat and it all cooks in one skillet.
Those are some of mine that are on the frequent meal list.
ETA: do you Pinterest? Because there are a ton of good one pot and easy recipes on there! Other ones that I want to try (haven't gotten around to it) are crockpot meals that you can spend one day putting a month's worth together for the freezer. Then just pull one out, put in the slow cooker, and when you get home it's done!

       Location: North Dakota | Cheesy Chicken Casserole
1 can Cream of Chicken soup 2 cups frozen corn 2 cups brown rice around 3 cups of water (that's the only thing I can't quite remember off of memory here) 1 cup shredded cheese of your choice. I use cheddar You can also add onions in here. I use onion powder for flavor because my silly husband won't eat onions.
Throw all of that into a 9x13 baking dish and mix it together.
Then lay chicken breasts on top and sprinkle with the seasoning of your choice. I use Mrs. Dash Extra Spicy
Cook at 350* for about 50 minutes
Super, super easy and so tasty! |

    Location: Deep South | How cool that I see this today after experiencing my very first "Tastefully Simple" party last night! A friend of mine hosted one and the whole company is based on selling quick, easy eats! Nothing requires more than 2-3 ingredients and all of their products can be bought for $10 or less.
I didn't get their website or anything while I was there, but I'm sure you can google it, maybe find someone who does them in your area. We sat around and ate delicious food for about 1.5 hours while she tried to sell us stuff for about 10 minutes! |

| Stew, Chili, Taco Soup, Recipe off the back of the Stove Top box, Recipe on the back of Campbell's Beef Broth for Stroganoff.
Than there's Cheesy Chicken Tortilla soup:
1lb boneless skinless chicken breasts
1lb velveeta - cubed into 1/2 inch pieces
Chicken broth (4 cups - I think)
1 to 2 cans Rotel
2 tsp cumin
Boil chicken, remove and shred, drain half the water out of pot, pour in chicken broth, veveeta, rotel, cumin, and return shredded chicken back to pot, bring to boil, serve over tortilla chips

Lasagna Roll-Ups Brown 1 lb. of sausage Saute in 4-5 chopped green onions Turn on low and melt in 1 and 1/3 blocks of cream cheese.
In the meantime, boil some lasagna noodles till cooked. Cut in half and let cool till you can handle them.
Apply a layer of your favorite spaghetti sauce to the bottom of an 8x8 pan.
Place a large spoonful of the sausage mixture on a half noodle. Roll it up and place in dish. Repeat until filling and noodles are gone.
Top with remaining spaghetti sauce. Bake for 20 minutes at 350. Top with a layer of mozarella. Bake for another 10 minutes.
Both recipes are AWESOME!!!

    Location: North Dakota | - Taco in a bag - put a roast in the crockpot all day then when you come home make a box of stuffing or put potatoes in the oven. Save the juice, then the next day you can make Auj sauce with french dip sandwhich's which consists of making grilled cheese and put some leftover roast in it. So yummy! |

   Location: Florida | If we're pinched for time (or I really don't feel like cooking), I get a rotisserie chicken from the closest grocery store or walmart and then I just make mashed potatoes and veggies and some sister schuberts dinner rolls :) (if you eat bread and you've never had these- you must. Immediately). It's quick, cheap, easy- ANDDDD leftover chicken= shred it, toss it in BBQ sauce and throw I to a. Sandwich or on top of a sweet or baked potato! Double meals and 2 of my personal faves ;) (you're welcome) lol |

| I don't have many recipes I tend to just throw things together and hope they work but one my husband likes is Mexican lasagna. I use flour tortillas then usually layer with refried beans, hamburger you can mix in salsa, rotel, Mexican corn, jalapenos, chilis, olives, sour cream and enchilada sauce. I make it a a little different each time cause I can't remember what I did the time before, it freezes well. I make big batches of spaghetti sauce, chili and freeze them, lasagna and enchiladas. I am not real good and having things ready for meals but this are what I make when I am on top of it. You can do the Mexican enchilada in a pan as well just make the filling but add crushed up tortilla chips instead and I do it with enchiladas as well just use bowtie noodles and mix everything else together it doesn't take very long. |

| Cabbage roll Casserole, Browned ground beef, canned tomatoes, onion, garlic, worchestershire sauce, salt and pepper, cut up cabbage and rice. Toss it all in the crock pot and top with shredded cheddar cheese before serving. Always a big hit in my house or at potlucks. There are recipes with the amounts of everything somewhere, but I just guesstimate amounts and it works out.

     Location: Where Governor's make the liscense plates | The easiest thing that even I can make is kielbalsa sausage cut into smaller pieces canned small potatos and green beans you put it all into a pot without draining the cans and add water if needed and bring it to a nice simmer in a pot on the stove or crock it all day on low. |

Taquito casserole: One box chicken or beef taquitos - lay them out in a 9 x 12 casserole. 1 can cream of mushroom, 1 can green enchilada sauce, 1 can Rotel. Mix all together and cover the taquitos. Cook at 400* for 25 minutes. Add cheese on top and cook another 5 minutes. |

        Location: Gainesville, TX | Make stuff. Boil some elbow macaroni, brown some hamburger meat. Mix elbow macaroni, hamburger meat, and a can of rotel together. Add salt to taste. Three ingredients (four if you add salt). Takes 10 minutes. French bread pizzas are fast. Get presliced french bread, add spaghetti sauce on top, then just add toppings (we usually do mushrooms, olives, onions, bell peppers, and pepperoni) and cheese. I buy everything prechopped at the grocery. Goes in the oven at 375 for about 15 minutes. And servings are already set. This takes maybe 20 minutes If you have an instant pot or crock pot, you can make crack chicken. Put four or five chicken breasts in about 1 cup of chicken broth. Add a block of cream cheese, bacon pieces (I just use the salad ones), and one ranch seasoning packet and cook four to six hours. Stir a couple times to help the cream cheese get melty. When the chicken is done, shred it, add it back to the cream sauce and add shredded cheddar cheese, about a cup, Stir it all together and done. |

| Dont know if it's been recommended but get an Instapot! I recently got one and I think I've used it almost every day lol! So easy for me and fast! Especially with my 2 boys in baseball and my daughter in varsity cheer.. I'm always on the run. Theres literally thousands of instapot recipes online and it's super easy and fast. I made beef and broccoli last night in it.. so tasty and the meat is always tender! |

Heat those up in a pan, then add some salsa, black beans, shredded cheese, etc. Last night I did diced tomatoes and green chiles too, then eat it either in a wrap or with tortilla chips. Started that when I was broke in college but it's SO easy and good! |

| One of the easiest things to me, is taking meat (chicken, ground beef, pork, etc) and whatever frozen veggies you want and add soy sauce; wallah you got stir fry. Lol. If you want to add red pepper flakes and stevia then it’s really good and still low carb! |

My hubby and I are also doing keto now. Most of our meals are not simple though. I cook constantly but we are so much healthier. He has lost almost 50 lbs and I have lost about 30. The diet has been awesome for my migraines. But if y’all want some amazing blog or cookbook recommendations I have tons. The Southern Kero cooking and Comfort Keto Cookbook are my favorites. I love the All Day I Dream I Dream of Food blog too. This diet has really stretched my kitchen skills but I have learned sooo much from it and can make just about anything now. :) Our favorite quick meal though is instapot Crack Chicken. It rocks |

     Location: Arkansas | One of my favorites is chicken breast, BBQ sauce (I use Sweet Baby Ray's), pineapple juice, and brown sugar in the croc pot. Cook on low for 6-8 hours. It shreds like magic with a hand mixer. You then have BBQ sandwhiches, wraps, nachos, etc. It heats up really well. We rope/rodeo quite a bit, and I drive an hour one way to work. What I usually do is something in the croc pot, or I'll check the weather and pick a night that it's supposed to rain and cook something that makes lots of leftovers. Enchiladas warm up well. Frozen pizza in a pinch is awesome, lol. I preheat the oven on the way to my shower, hubby sticks pizza in, then I take it out while he showers. We have our system down. One other option--I buy precooked Tyson spicky chicken patties. They take 1.5 minutes to heat up in the microwave. Put them in a tortilla with some shreeded cheese and sauce of your choice and they taste REALLY good. We eat a lot of soup in the winter and sandwhiches in the summer. |

WOW, Now that sounds really good, I'm going to have to try this maybe tomorrow night, thanks for this 
I make this quite a bit too. CHicken and salsa all day, then when I get home I add black beans and corn for the hour or so I go around feeding animals. Stir it up, it shreds the chicken, and we eat it with sour cream and shredded cheese and Tostitos Scoops. I also like "red beans and rice" - make a kielbasa, cut it up, while that's cooking, I make a box of zatarain's beans and rice. Or just rice and add my own beans if I don't have this handy. I also got tired of paying $10 for Chipotle's chicken bowl, so I make the Rice A Roni Mexican rice, heat up black beans, and cook some chicken and add shredded cheese, diced tomatoes and lettuce to make my own bowl. Kielbasa and pierogies is also good - spend $20 on an electric skillet and put it all in there with a couple Tbsp of butter, stir and flip a couple times and its ready in about 20 minutes. I did Keto earlier this year and found a couple recipes I liked. I made taco meat, but ate it in a bowl without a shell. Just meat, cheese, sour cream, tomatoes and lettuce. Get a rotisserie chicken and debone it while its still hot. Put it in the bottom of a casserole dish. Add a little spaghetti sauce on top and top with lots of shredded mozzarella cheese. Bake for about 10-15 minutes or until the cheese is melted and the sauce is warm. Like chicken parm without the breading. Yumm!! We also like buffalo chicken pasta. (I love bread, that's why I had to quit the keto, but I've learned to tone it done a bit). Cube up some chicken, cook in a pan with buffalo sauce ( I like creamy buffalo ranch). While chicken is cooking boil whatever noodle you like. Elbows, penne. Whatever. Once chicken is almost done, cube up a block of cream cheese, add more buffalo sauce. I make this quite a bit too. CHicken and salsa all day, then when I get home I add black beans and corn for the hour or so I go around feeding animals. Stir it up, it shreds the chicken, and we eat it with sour cream and shredded cheese and Tostitos Scoops.
I also like "red beans and rice" - make a kielbasa, cut it up, while that's cooking, I make a box of zatarain's beans and rice. Or just rice and add my own beans if I don't have this handy.
I also got tired of paying $10 for Chipotle's chicken bowl, so I make the Rice A Roni Mexican rice, heat up black beans, and cook some chicken and add shredded cheese, diced tomatoes and lettuce to make my own bowl.
Kielbasa and pierogies is also good - spend $20 on an electric skillet and put it all in there with a couple Tbsp of butter, stir and flip a couple times and its ready in about 20 minutes.
I did Keto earlier this year and found a couple recipes I liked.
I made taco meat, but ate it in a bowl without a shell. Just meat, cheese, sour cream, tomatoes and lettuce.
Get a rotisserie chicken and debone it while its still hot. Put it in the bottom of a casserole dish. Add a little spaghetti sauce on top and top with lots of shredded mozzarella cheese. Bake for about 10-15 minutes or until the cheese is melted and the sauce is warm. Like chicken parm without the breading. Yumm!!
We also like buffalo chicken pasta. (I love bread, that's why I had to quit the keto, but I've learned to tone it done a bit). Cube up some chicken, cook in a pan with buffalo sauce ( I like creamy buffalo ranch). While chicken is cooking boil whatever noodle you like. Elbows, penne. Whatever. Once chicken is almost done, cube up a block of cream cheese, add more buffalo sauce. Once chicken is done and cream cheese is melted (you can add some milk to help) stir it all together to get the pasta good and coated with sauce too, and serve.
These ideas are great! Thank you for sharing! We also roast veggies several times a week - takes about 30 mins. We roast anything and everything .... green beans, asparagus, broccoli, cauliflower, carrots, acorn squash (a favorite) ... cut into bite-size pieces. Place them on a large baking pan (I line it with parchment paper to make clean up super easy.) Sprinkle on a spice mixture -- I usually use a veggie type one or sometimes a chipotle flavor or a cajun flavor -- some salt, pepper, and olive oil or avocado oil -- roast at 400 degrees for about 30 mins. We save leftovers to add to salad or omelets -- and I'm guilty of snacking on the cold roasted veggies. You can add these to soups, too, and I've even topped tacos with them. (We love veggies.) |

English muffins, put some squeeze pizza sauce, mozzarella cheese, or whatever toppings. And they make the perfect mini pepperonis. One muffin makes two pizzas, so cheap to make. |

You put them all next to each other in a pan, put some butter on potatoes and green beans, then put dry italian seasoning over all of it. Stick it in the oven for like an hour (can't remember exact time off the top of my head), then it's done! Very easy and very good!
There's also one with shrimp but I can't remember it exactly.

Finish as desired - I love to top it with beans (refried or whole), avocado, cheese, salsa, tomato and sour cream ?? oh and some cilantro if I have it.     Location: never in the right place | shrimp foil packets_ the recipe I have is for 4 but I only cook for 2 so I use less 1 1/2 lb large shrimp, peeled and deveined 1 lb cube red potatoes,(the smaller the better they cook), 2 smoked andouille sausage thinly sliced 2 cloved garlic minced 2 ears corn cut into 4 pcs 2 tbsp olive oil 1 tbsp old bay seasoning 1 lemon ( i don't use this) 4 tbsp butter kosher salt, pepper, (2 tbsp parsley I don't use this) cut foil sheets 12" long. divide shrimp, garlic, sausage,corn and potatoes evenly. drizzle with olive oil, add old bay and salt and pepper. gently toss. top with lemon parsley and butter. Fold foil packets over mixture to completely cover and roll edges top and bottom to seal closed. grill 10-15 minutes. If potatoes are too big they wont cook. you can substitue chicken also if no shrimp. I adjust quantity by what my husband likes or doesn't like. He gets more shrimp I get more sausage lol

   Location: Pa | I'll add mine. You can use boneless, skinless chicken breasts to be a little healthier, but I like thighs for a tastier meal. Melt some butter in a skillet, add italian seasoning and simmer for a bit. Add in chicken. Cook about 6 min or so and flip. I like to cook a little longer to get a little crust on it. Add in aspargus, salted and peppered to taste, and cook another 6 minutes or until desired tenderness. Make sure to mix them up a little to get the seasoning on it. I usually just eat it with some applesauce on the side. Super yummy and pretty fast. |

  Location: Illinois | I do one pan stuff in the oven a lot, maybe more than I should lol. Usually pork tenderloins, chicken breasts or legs, or antelope/deer with veggies. The McCormick marinades are a staple in my kitchen. I just put whatver meat I have in the pyrex or cake type pan, pour half the mariande on that. Then i take veggies that I either cut up or just cheat and pour a bag of frozen mixed normandy style veggies over top. Pour the rest of the marinade on those and bake. If I want an extra side beyond that I just use the 90 second rice/quinoa packages. Sometimes I have frozen mashed cauliflower & will use that. Asparagus and mushrooms are my favorite with the pork. Usually with the chicken I do mushrooms, peppers, and onion. If I don't feel like cutting veggies or I don't have any on hand I just grab my giant bag of frozen veggies & viola. I cook just for myself so I usually end up eating the same thing all week. I made chicken, pepper, & mushroom kabobs in the oven last night and cabbage steaks. Super easy and I'm fed until the weekend now. I just got an instant pot so I'll probably try some thigns out with that. I also made a new favorite last week, I did tacos with the nacho flavored shells, but used ground turkey and then put a slice of bacon in the taco. Oh my that was so good. Tacos are super easy too and I always make 2-3lbs of meat in a giant skillet and then freeze a lot of it for the next couple times. |

| Oh my Gosh!!! Theres a use for the Not Your Fathers Root Beer thats rotting in our fridge. That stuff was NOT GOOD. I never thought to cook with it. I have a pork roast thawing out now so thats exactly what Im doing with it. Thank you. Chicken Thighs with Lemon and Rosemary. Put chicken thighs in the crockpot then mix ranch dressing, worchestershire, fresh rosemary, salt, pepper, garlic, lemon juice, and olive oil. I mix it to taste then pour it over. Ive always used fresh rosemary but I suppose you could use dry. I leave it in on low for about 4-6 hours. Its delish and literally takes about 5 minutes to throw the sauce together. the one that is my kids favorite though takes a little more effort but **** its good. Italian Sausage with Fresh Tomatoes and Mascarpone. Brown a package of italian sausage and break it into crumbles. when its done take the sausage out and sautee one diced onion until clear then add fresh garlic for a about 2 minutes then add LOTS of halved cherry tomatoes. I usually use about 3 pints per pound of ground sausage. I add in the sausage at that point and let it all cook down until the tomatoes are coming apart. I usually put it on low covered for about 30 minutes. then I use a potato masher and mash it all together. just before serving add one container of mascarpone cheese which will make the sauce creamy like nobodys business. Serve over pasta. Its so ridiculously good. My kids ask for it at least once a week. If tomatoes are on sale I will make the sauce and freeze it without the mascarpone then when I reheat it I finish it with the mascarpone. |

  Location: Sunny Florida | Fried Salmon and Mac Super easy what you will need Fillet of salmon, garlic powder, onion powder, some jalapeño garlic salt, and your your favorite herb spice blend make your Mac and cheese (I add some smoked Gouda to mine and Navarro) and place it aside. In a skillet cook your salmon make sure to season to taste. I use sesame seed oil but any oil will do. The sesame seed oil adds a great nut flavor and you can use it on any meat. Let your salmon cool for a minute and start to shred the salmon in with your Mac and cheese. Blend throughly and add your spices. With your skillet that you used for your salmon add some butter and let it melt. Place place your mac&salmon in the skillet and let it "fry" I just brown it a bit making sure to stir and flip often. Add in some more shredded cheese, let it melt. Serve with some diced chives on top. |

Slice potatoes and put them beside the veggies on the bottom. Bake at 350 for 45 minutes or so, basting regularly. Also works with turkey thighs, pork ribs or most any meat. |

| Ingredients Deselect All Kosher salt 12 ounces linguine 1 1/4 pounds large shrimp, peeled and deveined 1/3 cup extra-virgin olive oil 5 cloves garlic, minced 1/4 to 1/2 teaspoon red pepper flakes 1/3 cup dry white wine Juice of 1/2 lemon, plus wedges for serving 4 tablespoons unsalted butter, cut into pieces 1/4 cup finely chopped fresh parsley Directions Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain. Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, 30 seconds to 1 minute. Add the shrimp and cook, stirring occasionally, until pink and just cooked through, 1 to 2 minutes per side. Remove the shrimp to a plate. Add the wine and lemon juice to the skillet and simmer until slightly reduced, 2 minutes. Return the shrimp and any juices from the plate to the skillet along with the linguine, butter and 1/2 cup of the reserved cooking water.     Location: Montana | One to Two pot wonders has been my go to, for the last couple of years 1. Because we lived in a 29 ft toy hauler for 18 months and you learn to cook small or BBQ ALOT! ( our oven didnt work and the microwave couldnt go longer then 3 minutes without dying,) one of our favorites is a meat/veggie skillet over rice. I cut up whatever meat I had extra of, through it in a pan with EVOO, season it after a minute or two of cooking, cut up whatever veggies, normally zucchini, yellow squash, onion or aspargus, Or if was really feeling ambitious all of them, through them in the pan and then season again, I would season with whatever I was feeling when looking in the cabinet. We also ate a lot of salads, in the trailer I couldnt make up a big bowl like I do now, so we did bagged salads and whatever meat. With the house I can make a large bowl up that will last a few days, before I have to make another. Another is to buy the pre cut veggies and meats at the store, like here, Albertsons and Safeways, have precut veggies made up, or the meat counter will have stuff like fajitas already prepackaged with the chicken and the veggies, then you can just through them in the pan and be done. |

   Location: Frozen Tundra, WI | Anything in the crockpot is a win for us. I like to throw a bunch of boneless skinless chicken breast (frozen or not) in the crockpot with some chicken broth, garlic powder, onion powder, whatever seasonings. I am not sure how long to cook, depends on your crockpot and which setting. But cook until it shreds easily. I like to do a bunch and then have it for the week. We use it as is for salads or added to quesadillas. Heat up with some salsa for chicken tacos, heat with BBQ sauce for pulled chicken sandwiches, add a bag of frozen veggies or chop up fresh and have stir fry. If you dont' mind being locked in on seasoning, you can cook right with a jar of salsa or BBQ sauce. Also good with italian dressing in the crock pot. We do the same thing with pork loin. It goes on sale a lot for $1.99 a pound and is super tasty. |

Not healthy but delicious! Taco Casserole - Grease 9x13 pan and unroll Pillsbury crescent rolls out to cover the bottom - Bake at 350 until golden - Brown ground beef and make with your favorite taco seasoning - Layer sour cream, ground beef, beans (black or dark kidney or refried), salsa, and cheese - Put back in the oven to melt/warm - Pull out and top with tortilla chips Frito Salad - brown ground beef - drain a can of dark red kidney beans - create a salad with iceberg lettuce, ground beef, beans, cheddar cheese, and fritos - top with Catalina dressing *This is my mom's recipe. She likes to mix everything up and then serve, but I prefer to layer and mix it on my plate so leftovers stay fresher. |

    Location: Fort Worth / Springtown | This one was a WINNER with my husband (who is very picky and always says he hates chicken on a bone....well all I had was a whole chicken, so I searched a recipe and I found out the next day he truly thought my chef-skilled father had brought food over, again, when I told him I'd gone barrel racing and there was dinner in the oven lol ) It has a very cool presentation and SOOO easy! OVEN ROASTED WHOLE CHICKEN AND CABBAGE Pat chicken dry with paper towels. Remove giblets package if inside chicken still. Fill chicken cavity with chopped up onion and parsley. Rub 1 tablespoon butter all over the chicken. In a small bowl mix salt, pepper, paprika and garlic powder together. Sprinkle on chicken, inside and out, patting the seasoning on chicken so it sticks. Place a 12" well seasoned cast iron skillet on middle rack and preheat oven to 425 degrees. If you don't have a cast iron skillet you can also use a roasting pan. In a large bowl toss cabbage with 2 tablespoons butter and 1 tablespoon olive oil so it's completely coated. Season with salt and pepper. Once oven is preheated, remove cast iron from oven and place cabbage on bottom, patting it down. It might seem like a lot of cabbage but it will wilt down significantly. Place chicken in the middle of skillet, on top of cabbage. Put in oven and roast for approximately 50-60 minutes, or until the thickest part of the chicken (I usually check the breasts) is 165 degrees. Remove from oven and allow to cool for 15 minutes before carving.
