It Goes On

I dont have much experience with large purchases ($10,000 + i am talking). I am going to be purchasing a horse trailer (from a private party, not a dealer). What is the safest way to pay for both buyer and seller? Straight cash (I'd hate to travel with that much)? Cashiers check?
How does everyone else like to do it?
Also, I know it varies from state to state but how does it usually work as far as title transfer? We have worked out a trade deal (my trailer + cash in exchange for her trailer). I am located in Oklahoma (but am from PA so that is where my trailer was titled) and she is in Missouri. Do we just sign the titles over to each other? Should we write up a bill of sale and if so what all should I include?

I bought mine long distance and did a bank to bank transfer, then title and bill of sale arrived with the trailer. When I sold my old one, someone out of state bought it. She paid with cashiers check, I signed title over and we each signed a copy of the bill of sale stating the terms. I was comfortable that she was legit or I would have verified the cashiers check before signing anything.
