| Best way to tell if a horse is sore is by watching them walk, and trot in straight lines directly away and to you.
If there is hock pain when they place their foot on the ground and shift weight their hock will wobble.
Their leg might swing out then back in like in a curved motion at a walk and trot this is when they pick their foot off the ground and move it forward to just before they place it back on the ground.
There are also ways to flex, but if you have a suspicion get a second opinion as vets can see things the lay person can't.
Edited to add I am a lay person who has had many horses with ailments, and I make my vet explain what he is looking for and what he sees.
