School starts for me next week! And as a teacher...not really crazy about school lunch.

But sometimes I get sick of sandwhiches...I am looking for ideas on what you pack for lunch.

Feel free to share! Going out is not an option as I have about 25 minutes to scarf. Looking for healthy ideas-no frozen meals. BLEH.

 I don't work but I make stuffed peppers, taco salad, left overs for my husband to take. I am not crazy about cooking so I will make lots of stuff at one time, one mess to clean up and don't have to think about it for the rest  of the week.

I saw at Bed Bath and Beyond a microwaveable cup with a tight fitting lid that also vents on top.  If you have a microwave, soup would be easy.

Salad

Cesar, taco, pack everything separately heat up the meat

I would use half my Sunday to make meals

Sweet and sauer meatballs with rice and vegetable

Chicken breast barbecued/Jamaican mistake/Parmesan/ranch with either rice or garlic potatoes with a vegetable

Turkey/chicken/roast beef with mashed potatoes gravey and vegetable

I usually take a protein bar.  A cooler just doesn't do much good in a ups truck....I guess if I bought a Yeti, lol, but I have horses. Or some nabs....not the best or healthy, but it is quick and not messy.

i pack a fiber bar; also i like to take chips and salsa; as mentioned before left overs, but i make extra so i plan on taking them for lunch; i know you said no frozen but sometimes thats easy on the go; cheese and crackers is another favorite of mine

Dinner from the night before!! I work nights at a vet so I bring dinner from that night and I just don't eat dinner a tumor but you get it. There are to a of healthy crock pot idea that you can turn on before you leave that will be ready when you get home that you can eat the next day (or week in my case). I love to cook a bag or package of chicken breasts a few different ways and put them in the fridge and take them throughout the week.

Ranch powder + chicken (skillet)
Onions, season salt, dap of butter + chicken (oven)
Garlic salt, celery salt + chicken (skillet)
Lemon pepper chicken (while crockpot/ breast oven)

I like chicken :) cheap and semi healthy

I'll pre-make salads then add tuna to them when I'm ready to eat. I buy the canned tuna and add that to almost anything - salads, sandwiches, or brown rice. Eat with some greek yogurt and you are going to fill up on protein quickly!

Thanks guys! Keep the ideas coming! I planned my dinners and lunches all out for next week. Going to the grocery tomorrow. There is nothing worse then not being prepared.

I am trying to stay away from lunch in a can or lunch in a frozen meal...I prefer to do upfront meal prep, but when I think about what I want for lunch and dinner I get a little overwhelmed about it all and either make too much or not enough. I don't want to necessarily always rely on left overs, and I want to try and get my lunchs made on say a Sunday so they are all packed during the week and I can just grab and go. Then naturally I have to double that-so that my husband can eat too.

Smoothies ! I've replaced my lunch with smoothies lately and with the right ingrediants they are very filling and HEALTHY!
A blender cup is amazing and will keep your smoothie blended . I got a Ninja smoothie maker for $30 and its the best purchase ever. Hubby gets one sent with him every day to work for breakfast.

 Chicken ceasar wraps are yummy also. All you need is a tortilla , chicken breast (grilled or breaded) , lettuce , dressing and some grated parmesan .

Around here, everything fits on a tortilla...lunch meat, ground beef, cheese, anything you like. Warm it up or eat it cold, whichever you have time for. I've made burritos of just about every kind, quesadillas with veggies, meat and cheese. 

For added protein my SO makes "Hollywood crackers" (thats what he calls them), he uses wheat Ritz crackers and peanut butter.

I don't prebake mine. I do pierce (with a knife) the potato in about three places all the way through and at 90 degree angles so that basically it's pierced on each "side". I also have wrapped them in saran wrap, but like the taste better when they are pierced. I like mine a little crunchy and sometimes the saran wrap makes them soggy if over cooked. I cook mine two to three minutes according to size, turn them over 180 degrees and bake two to three more minutes according to size, then check and continue at one minute intervals if necessary. Microwave strength will determine cooking time as well.

 What kind of tortilla do you use? Tortillas are usually high in carbs.
