Currently my horse is in a d ring snaffle. Its clear she doesn't like it, im guessing due to the single joint. I want to switch her to a jr cowhorse with the roller.

One problem. Once a week I have a dressage trainer work with her. The trainer agrees to try other bits but shes very anti barrel racing.

stupid question but can I bit her up in a jr cowhorse? I lunge with her bitted up before riding. And can she be ridden in low level dressage in it? Shes only in training level but I heard gag bits in dressage is a no no... not that I compete but still...

Since she is very anti barrel racing I can see her being biased on what she suggests to you on what you should try. You can probably do anything in a jr cowhorse since they seem to be one of the lighter gag bits out there but she most likely can't be shown in low level dressage. At home just riding and training, put anything in but at a show there are a lot of no-no bits that IMO are perfectly fine bits to use.

If she dislikes the single joint why not put her in a dog bone or chain mouth O ring?

ETA: I know nothing about dressage so if this is a "no no" or will not serve the purpose then that's understandable.
