How and what do y'all use to re waterproof your horse blankets and sheets?
Side note: I have some cheaper off brand blankets that I'm not sure if they're water proof or not... Can a use something and make them waterproof?

You could scotch guard the heck out of them, should help somewhat.

I use the water proofing spray in the camping section at Walmart. My blankets are between 70"-74" and I can cover them in one can.

This and they make a product to use on the stitching and seams. I recommend using both.
