I'm crazy about leftovers...Hamburgers are nice to just put in a bag with lettuce and have a wrap...Cabbage rolls are good if you have a place to warm them..Sometimes if I'm lazy, I'll grab a pre packaged salad kit from the store and munch on that...But I tend to forget the night before to get my food ready, so I'm always scrambling!

I need some ideas for healthy meals to take to work, for breakfast and lunch.

Something easy to pack and that can be ready the night before so I can grab it on the way out the door.

What ya got for me!

Easy breakfast ideas ...

Muffin egg cups -  Mix up scrambled eggs and add in extra veggies and good things,  then in a muffin tin, measure out your mix into each cup, bake, then store the egg cups in a baggie in the fridge. We love to just grab these and eat 'em on the go.  They are good cold or warmed up in the microwave quick.

Overnight oats - add oatmeal, greek yogurt, berries. mix well in a plastic bowl with a sealable lid (think tupperware).  leave overnight in the fridge,  take out and add in crunchy things like nuts or low fat granola - enjoy!

Lunch ideas -

I love the salad in a jar ideas ... I make them the night before.  Basically, layer in greens, veggies, low fat meats, nuts, etc into a jar - refridgerate and take to work!  I have several of the tiny cups with lids for pre-measured dressing that I will also make up for the week and store in the fridge.

Good Luck!

I love the salad in a jar. So convenient to put together the night before. I also am a HUGE fan soups and stews and tend to make a lot on purpose so I can take the leftovers for lunch; I tend to put those in jars as well (I'm the jar lady at work!).

Wraps are quick and easy. Mediterranean  wraps are my SO's favorite and I bet I make them once a week: cucumber, roma tomatoes, romaine lettuce, hummus and grilled chicken strips.

Today I am having sugar snap peas, baby carrots, almonds, dried cranberries, low fat string cheese and a cutie. I feel so full when I am done and it takes me awhile to eat, so I don't feel at all deprived. I keep all this stuff in bulk at work in my desk and a small fridge we have, so I only have to replenish my supply, not plan it out every day. I also keep fiber one bars in my desk for a "sweet". The chocolate bownie ones are yummy!

I am a creature of habit and picky eater to begin with. It does get boring, but on the weekends I pretty much eat what I feel like within reason.

I made this tonight ... we loved it and everyone had seconds!! ( I skipped the hot pepper, my kids wouldn't go for that. I added extra lime juice and a little bit of a bbq poultry spice). http://ifoodreal.com/zucchini-noodles-with-cilantro-lime-chicken/

Also, I'm loving this for breakfast lately. I make a batch and split into 3 servings.
1/2 cup toasted steel cut oats (toasting them in a dry skillet makes them so much yummier!!)
1/2 cup milk
1 single serve greek yogurt container. they are like 5-6 ounce containers. I like the nonfat Oikos with fruit. Whatever floats your boat really.
Add some extra berries, peaches, mango ... whatever. I keep frozen fruit handy for stuff like this and smoothies
Mix all together and store in fridge overnight. Delish!

I always have a snack box in the fridge. It has baggies of carrots, apples, grapes, cuties, cheese, almonds, grape tomatoes, celery, etc. in it so I can tell myself "I can have ANYTHING I want from this box!!" It works in my brain, I hate limits.

if you have a microwave. I like to keep a couple of little boxes of frozen veggies. If I forget to pack something and running late I grab one and a quest bar. or you can grab one and a piece of leftover chicken

I will send you a pm. Yes it is one of the shakeology ones but you don't have to buy or drink the shakeology to use it. You have different sizes of containers for protiens, fruit, carbs, veggies, oils etc. I have a hard time dieting and deniying myself the food I want and am a sweet tooth, but I was able to do this one. It is all about menu planning and having food ready in advance I wasn't hungry I acutally had a hard time eating the amount of food I needed too. It comes with work outs too. But the eating and workouts are seperate.

I do too. Either I eat them out of the can, on sandwiches, or put it on a salad. There are probably more variations out there also.

First question would be, what do you like to eat....as in fruits, veggies, protein sources?  I pretty much stick to the same food, and often I do founder myself at times then I move to something else...

Breakfast
*eggs & multigrain gluten free toast
* I do a breakfast sandwich occasionally- egg, Turkey bacon, low fat Swiss cheese and gluten free bread
* gluten free oatmeal & almond milk...topped with organic peanut butter
* smoothie- 1 c fruit, 1 scoop Cellucor protein powder (whipped vanilla), 1 c almond milk ( got to watch SUGAR content on smoothies, why I don't include yogurt and just use frozen fruit I buy in bulk)
*protein pancake- 1 scoop Cellucor, 1/2 soft banana, 1 egg, 1/2-1c gluten free oats...mixed and fry. I usually top with Walden Farms Pancake syrup

Snacks
*carrots (only veggies I can stomach for long periods) and snap peas or cucumber
*almonds or cashews (watch portion size, these suckers add up the calories)
*rice cakes (mostly the chocolate ones lol)
*hard boiled eggs
*bananas & oranges I limit my fruit intake
*organic peanut butter on a spoon (on celery sometimes too)
*a protein based snack is always a great option!

Meals
*any protein source you prefer, in our house steak, fish, chicken, bison anything is free game. We use all natural seasonings and gluten free ones.
*rice (I love rice)
*green beans (I buy the frozen ones, easy to pull out and cook)
*sweet potatoes (I love frying them in coconut oil...cut them thin and yummy
*healthy fats, love coconut oil, use it for everything
*kale salads (while I'm not a huge salad fan I've found a kale based on even my husband loves)
*Walden Farms has great dressings and sauce blends that have zero calories and aren't aspartame based

Meal prep isn't as scary as some think......cook a few chicken breasts, cook some veggies and or throw it in a salad and you can have a couple meals ready.
