Is it customary for the potential buyer to pay for your fuel? Especially if they are asking you to drive several hours to try the horse. Just curious to see everyone's opinion on this subject.
If we were selling the horse and had to meet the buyer yes. They would pay for all fuel if they bought the horse or not. That's how we have done it in the past.

I would get a USPS money order. You can cash it right at the PO and you have $. Set meet date far enough out for this to happen, if you don't get it in 2-3 days they are a no show
