I'm trying to learn about bits because I know barely anything. Today I looked at a bit that had a copper roller. What purpose does it have or is it just something for a horse to play with with their tongue?

You are correct, and they have a good taste supposedly. Keeps bored horses occupied.

Copper is used to help encourage salivation, keeping the horse's mouth moist. The roller is to give the horse something to do if they get nervous or bored.
