How do you decide what size gullet, bars ect your horse needs?
I have 4 horses and want to make sure their saddles are comfortable for them. Also looking into buying a saddle for one of them, and want to know it'll be comfortable.
Do you just try and say this worked or didn't?

 Since I've started back riding I've always took my horses to a fitter.  I don't trust myself to make those decisions yet!  I  hauled to Martin, had Double J done at a show and hauled a horse to try a Triple Creek on.

I went through this same thing last year. I've tried the CJ cactus, which fits everything I have except one. We do have to shim for our more narrow mare. I have tried the Martin and Double J along with test riding in some used saddles of various brands. Sold Martin. I like the Double J for my horse but not not for me. I'm going to sell it. I am fortunate enough to live near a lot of saddle places so I can try different ones. It can be frustrating, be patient. Best of luck to you.
