My SO rides dirt bikes competetively so I thought it would be nice of me to get him a helmet all customized and such since he had built me something really nice for the horses...
He was so excited when I presented the idea...

$700 Later he had his Cutomized helmet... I about died LOL  

If you can get out for a customized gun sling or something to that effect go that route for sure!! Teskey's sells some really nice customized slings and cases for rifles. (Also got conned into getting him one of those for the rifle that is used once a year for him to "hunt" with.) But hey, It was cheap enough, so I dind't complain. Here is a link in case you are interested. They also have scabbards. IDK if he rides while hunting but that is what I bought for my dad. He likes to ride out to the deer stand on horse back. I also have bough multiple Case Knives and had them engraved for my dad and SO. THey loved them. My daddy is a Texas Mason so I bought him the Masonic Lodge knife set and had it engraved with his ranking and full name. He cried. 
SO uses his Trapper daily. Baby Brother loved his as well for Christmas. He sows all his buddies at the rodeos his knife. He's pretty proud of his mini trapper. Just make sure if you do get a case from Teskey's you tell them to stamp it and not engrave it. Stamping lasts longer and looks better than Engraving. They painted SO's lettters red for him to match all his other gear.

I got my hubby a personalized gun sling for Christmas this year and it was a HUGE hit! Lanies Leather on fb is the lady I used, LOVED her work and was really impressed. Also not to expensive.

I bought a custom made fishing pole and had a note inscribed on the rod before they cleared it. Then I went on Etsy and had a personalized fishing lure that said "You are my greatest catch". I had about 175 in the whole deal.

I did a spinoff of the beer can cake. I made him a cake out of boxes of ammo, beer, and beef jerky.

I also have gotten him a custom camera strap from Heritage Brand and it. was. beautiful. He loved it.
