I walk & trot as well. I was told not to let then lope up hill because that's their lazy way out...someting about them not using their hind end as much when they lope? An old timer told me this a long time ago so I can't recall exaclty his words but I've never done it since.

This ^^^ worked wonders when I rehabbed my filly and needed to help her strengthen her rear end. SLOW is your friend on a hill.
If you are really looking to "stand one up" without using hills - had a reining trainer last weekend recommend counter cantering - so take the left lead and push the horse into a circle going to the right. This makes them stand up and use their bodies much differently.
