I have a horse I'm starting on barrels. He doesn't have them down enough yet to transition to loping the pattern but every time now we start working on the pattern he wants to pick up into a lope. I've only let him once but our turns were so sloppy. Good ways to keep him calm, focused and at a trot? He did have a week off from even seeing the pattern.

Make sure the horse is warmed up for a long enough before working on barrels. Lots of looping and long trotting. Lots of work on basics like crossing over, getting control of shoulders and hips. Some days just do a lot of basics and loping instead of working on barrels. Picking up leads from a walk. This will help you have control of the horse when you are ready to lope.
