I got my buck yesterday so now the real work starts. I want to make some yummy Italian and breakfast sausage but don't have any good recipes. Would anyone mind sharing?
3lbs venison 2lbs pork fat 2 tsp. dried thyme 1 tsp. marjoram 2 tbsp. salt 2 tbsp. sage 1 tbsp. black pepper 8 tbsp. or 1/2 cup of maple syrup 1/2 cup of ice water
cut venison and pork into 1 inch cubes and grind through the fine plate of your meat grinder. Combine the spices into a small container and mix with the ice water and maple syrup. Pour everything into the ground meat and mix throughly using hands for even distribution. Once fully mixed, stuff into casings.
