| I am feeling adventurous, so I have decided to try making a homemade pie for the first time. Since it's Thanksgiving, I thought I'd try pumpkin. Do any of you have a good recipe? |

| I have been cooking for a long time anhere are my suggestions. Buy the READY CRUST by Pilsbury. Do not substitute. They are in the refrigerator section. They come in a box and you put them in your own pie plate. I think I used to use Delmonte pie filling. The recipe is on the label. Libby's has the spices already in it and it is not as good. Don't tell anyone that you used the READY CRUST and they will never know!! I fooled my husband for years then he saw the box in the refrigerator. Bummer.
Serve with a squirt of Redi Whip on top.

| I make my own crust that uses vodka very easy crust to handle and way good ! I have two that we use but this one is the easiest to handle and you can always have a drink while you bake. I don't have my recipe handy but I cook the pie filling on the stove top for a short time and I use heavy whipping cream in it. It is the best pumpkin pie everyone raves about it. I found it on line a few years ago. I guess I better find it since it is about that time. Oh and if you go to pioneer woman she has a recipe for a whiskey sauce that is so good on pies .

If youre making homemade pie you must have homemade whipped topping, youll never go back to coolwhip again.

Libby's pumpkin pie recipe is pretty good, you can google and see what pies have the best reviews, I love baking but if you buy from a store, hands down BEST pumpkin pie and its huge and $6?! Costco. YUMMY. |

I do make a pumpkin cheesecake that is so yummy and easy!
2 8oz package cream cheese
1/2 cup white sugar
1/2 teaspoon vanilla extract
2 eggs
1 9 inch pie crust
1/2 cup pumpkin purée
1/2 teaspoon ground cinnamon
Pinch ground clove
Pinch ground nutmeg
Preheat oven to 325. In a large bowl combine cream cheese, sugar, and vanilla. Blend until smooth. Blend in eggs one at a time. Remove 1 cup batter and spread into bottom of crust, set aside.
Add pumpkin, cinnamon, cloves and nutmeg to remaining batter stir gently until well blended. Carefully spread over in the crust. Bake in preheated over for 35-40 minutes or until center is almost set. Allow to cool and refrigerate 3 hours or overnight. |

1 box yellow cake mix
1TSP salt
3/4 Cups melted butter
1/2 cup coarsely chopped pecans ( optional)

in a large bowl combine pumpkin eggs brown sugar white sugar and milks. Stir in cinnamon ginger nutmeg and salt. pour into pan. sprinkle dry cake mix evenly over pumpkin filling mix. sprinkle pecans over cake mix. drizzle melted butter over all.
Bake 50-60 mins or until edges are slightly browned.
We served chilled, but can be served either way. We also had cool whip to top when served.
