Just like in humans... sugars! Molasses (sugar), starches like corn and rice (turns to sugar) people tend to stay away from sweet feeds for this reason.

Grains in the diet like oats, barley and corn. Oats are a far better than corn or barley because oats are digested more efficiently in the pre-gut. Horses fed oats will experience high blood sugar levels after a meal, a high insulin level, and a dramatic drop of blood sugar. This can produce behavioral changes and also produce fatigue. Many horses are very sensitive to extreme highs and lows in blood sugar and this can lead to performance and training programs. Hays, rice bran and beet pulp do not produce this "sugar high" because they are digested in the hind gut

I have 10 head now, and over the years with them and others I have noticed a big difference in my horses getting more hot when they're on even non-molassas beet pulp. I feed it as a pre-race boost for that reason. It is touted as an easily digestible source of energy so that maybe the reason why.

A long time ago I read an article about not feeding your horse enough energy can make them hot and act nervous. Kind of a contradiction but it made sense at the time when I read it and it was so long ago now I can't remember all the details.
