 I'd go 1/2".  The wool is so dense that you shouldn't need to worry about protection for that thin of a pad.   Definitely wouldn't go as high as 7/8" .

My saddle fits my horse perfectly and I use a 1/2" pad. When the fit is good, I don't see a need for extra padding. Less is more, in my book.

So then I guess it depends on what you mean when you say your saddle is a "smidge small".

If the saddle is tight the only pad that will help it is s Clinton anderson pressure relief pad.

The 5 star isn't going to prevent your horse from getting sore
