Everywhere!  Utah is a great state for barrel racing.  There are races in both Northern and Southern Utah.  Most larger races are in Northern Utah, but there are weekly jackpot everywhere.

From the far north in Tremonton clear down the I15 corridor to St. George.  Smaller races in almost every town and almost every night of the week.

utbra.com has a pretty good calendar showing most of them.

Like everyone has said so far.  Everywhere.  You have to remember Utah is a pretty small state and really only take about 6 hours to drive from the top to the bottom.  You also have some decent races in Idaho and Wyoming you can hit within a reasonable amount of time.
