These are called seat rig saddles.
A rigging is where the cinch or D rings go. 
 

These saddles free up your leg movement. They do not pinch and are way more comfy to ride in my opinion. Many Day workers prefer them on the ranches around here. Cowpuncher makes a pretty cool looking one but any saddle maker can make you a seat rig saddle. 

ETA: They allow your feet to swing more forward than a traditional saddle. Lots of cowboys buy these saddles to ride colts in so they can place their feet in front of them if the colts buck allowing them to either spur or not get dumped, or both.
