       Location: In The Snow, AZ | So we are heading to a big three day race after Thanksgiving dinner... we have the LQ trailer. It has the micro and stove top. No oven, unfortunately and I'd prefer to Not have to take a grill.
What are some meals that you all take/make, fairly easy to put together in the trailer? Make and take or take and make. ;)
Just looking for something other than making grilled cheeses. It's getting old. Lol. I need some fresh ideas to keep us full!

how about taco soup & corn bread (make ahead & heat up in microwave)? its a super easy recipe & tastes better the 2nd day

| When we travel for our HS and Jr High rodeos my mom makes these Chicken Salad wraps that are amazing and conveinent to eat if your in a hurry (and rather filling!) Any kind of soup that can be heated up is good! She also pre cooks scrambled eggs then just heats them up for breakfast and you can make bacon on the stove too. You can also marinate some chicken in Italian dressing, it's pretty tasty :) You can even buy those microwaveable macaroni or mashed potatoes (or really anything meals) that are handy. A pack of Kings Hawaiian rolls is also easy for a dinner side or snack :) |

| I usually make us some homemade BBQ, take fixings for Ruben sandwich. Sometimes I will make some Baby Back Ribs and take to be heated up. Since you are leaving after Thanksgiving you should have some leftover turkey, make some noodles for turkey and noodles to be heated up. |

| I made King ranch casserole and a breakfast casserole for a week stay. We also took those tuna packs for sandwiches and banana pudding. Sliced fruit and dip for snacks. I have to have food besides chip and dip stuff. |

          Location: Texas | Crockpot. Don't forget the liners so you don't even have to wash the pot. Pot roast with canned potatoes and mini carrots and onion soup mix is easy. Taco soup is also a fav. |

    Location: NE TX | Anything in a crockpot meal is quick and easy. I've also done marinated chicken and baked potatoes before. Sandwiches or someone suggested grilled cheeses. I don't eat much on the road so I usually grab one of the snack boxes from my deli and it's got pretzels, cheese, and pepperoni. Breakfast some of which instant oatmeal packets, cereal &/or granola bars and milk, since you have a stove you can do eggs but then you have to clean the pan.

| Left over or precooked lasagne or spaghetti. Super easy to heat up in the microwave. Last year at a race right after thanksgiving I made chicken tortilla soup with leftover turkey. It was awesome and we put it in a cup to have on horseback! |

| Definitely crock pot! We're actually living in our living quarters trailer and have found it's not too hard to make anything we want, especially since we have a toaster oven. Spaghetti and chicken alfredo has been easy and delicious, cook the noodles and chicken and dump the sauce in. Can easily make burgers and brats in a pan on the stove.
Or since it's after thanksgiving, take leftovers to heat up!  |

       Location: In The Snow, AZ | Thank for all the suggestions! I'm definitely going to start incorporating some of them into our trips! Personally, I don't mind just snacking on whatever, as my mind isn't typically on food at a race! But hubby and our daughter like meals, so just trying to make it simple. Planning on taking turkey dinner leftovers... but this is my first year making my own turkey and fixins, so if I burn it to a crisp... no turkey for us.  |

| Another one for the crockpot! And DEFINITELY use the liners. I do even when I'm at home because I hate washing the dang thing. If you don't want to prep much in the trailer, make up a few batches of soup or stew ahead of time, then in the morning just dump them in the crockpot to start warming! |

    Location: Missouri | We also use our crock pot a lot! If I don't get something made ahead of time, the frozen "meal in a bag" for crock pots are pretty tasty. I don't use the stove - it's one you set up outside, so our stuff is either all microwave or crock pot. One of our faves is walking tacos or taco salad. I cook brown hamburger, add chili beans and taco seasoning, ahead of time at home. Take tomato, salsa, shredded cheese, sour cream, and either tortilla chips to crunch up with that or (if I remember), get the serving size bags of doritos, open it, crunch them up, add the meat and fixings.
Lasagne is great for making ahead of time then warming up in the microwave. Another fave is a mexican chicken casserole I make with chicken breasts, corn, black beans, salsa, cream of chicken soup, sour cream, shredded cheese, and either rice or pasta cooked in with it. Pulled pork and baked beans goes over well. Basically any leftovers work great. Since I'm no longer as organized as I once was, it often comes down to hmmm...what is in the fridge?
For us, lunch is often a sandwich unless it's cold out, but supper is our main meal. I like something daughter and I can fix quickly when we have time (often not at the trailer at the same time, so also something that is easy to do for one person). I don't fix breakfast - even at home - so we like muffins, granola bars, fresh fruit, and the frozen breakfast in a bowl aren't bad at all!

     Location: Texas | When I am meal prepping for work, I always cook chicken breast, broccoli and rice and put a helping of each in single serve tupperware containers. That way all I have to do is throw it in the microwave to heat it up and it's ready to go. Quick, healthy and easy to make and everything can be made on the stove top. |

| I love the idea of having already warm soup in the crockpot this time of year!
Any time I take food, I always pack breakfast burritos. I individually wrap them so they are easy to grab and go. I am a freak about breakfast. I can skip food the rest of the day, but I have to start off with a hearty breakfast! |

      Location: Wyoming | Anything that can be heated in the microwave . Chicken tacos, burritos , breakfast burritos, chili, soups etc.
I also take sandwich stuff or make ahead wraps. Chips , Salsa and dips.
I try to keep it pretty simple because clean up is such a pain.
