There is a double saddle that I am interested in. The tree is a standard so what size gullet would that be? Also how many people like double j's?

That depends on the model. A pozzi standard has a 6 1/2" gullet and a pro has a 6 3/4". Lynn McKenzie, duke, pro elite, etc are all going to have different trees.

It really depends on what model Double J it is. I had one with a Pro tree that had a 6 3/4 gullet.
