We recently moved back to Wyoming after a very short (or long) 9 months in Texas. Since we decided to move back there are 3 sets of couples whom have become dear friends and have helped my SO and I out a ton since before we even got back into town. I am wanting to get them a special gift but am totally stumped on what to get.

I usually get them a bottle of wine and then a giftcard to their favorite resturant. Sometimes I get them 2 wine glasses and put it in a basket and wrap it to make it look all fancy with a big bow.

We do gift exchange for with friends every year...
We either smoke ribs and make homemade cinnamon rolls or give gift cards to their fav places.
If they have kids I offer to babysit so they can have a date night as well

If the couples you are wanting to give gifts to have children, you could always offer to watch the kids for an evening so they could have a "date night". I've done this before.
