How did you cook the pork chops? I have some thick center cut and can never cook them to be tender? |

The pioneer woman website is my favorite place to find new recipes! All her stuff is GOOD!
I hate her new website because it's so hard to navigate but I have 2 of her cookbooks. Love that her recipes don't use ingredients I have never heard of and would have to take a boat to India to get!
Last night, I fried potatoes and onions and grilled German sausage out on the grill along with some baked beans. |

Lol, I can relate. My oldest daughter is an excellent gourmet cook. When she lived out of town she would send me her grocery list so she could cook for the holidays. It took me forever because I didn't have a clue what most of it was, didn't even know where in the store to start looking, Google was my best friend, boy was deliscious though. |

You will love it!! I'm not sure if you found a recipe you like, but the one I have has worked out great every time!
Chicken Gnocchi Soup
3-4 Chicken breasts diced and cooked (I use 3)
4 cups chicken stock
2 cups half-and-half
1 stalk celery diced (I skip this)
1 garlic clove chopped
1/2 carrot chopped
1/2 onion diced (I use a sweet onion)
1 cup fresh spinach chopped
1 tablespoon olive oil
1 teaspoon thyme (I have used this and sometimes I don't- I like less)
Salt and pepper to taste
16oz potato gnocchi
1 tablespoon cornstarch (if needed)
1: Cook chicken
2: Saute onion, celery, garlic, carrot in oil over medium heat until onions are translucent
3: Add chicken, chicken stock, half and half, salt & pepper, thyme. Heat to boiling, then add gnocchi. Gently boil for 4 min, then turn down to a simmer for 10 min.
4: Add spinach and cook for another 1-2 min until spinach is wilted
***Heat to boiling and add cornstarch dissolved in 1-2tablespoons of water at this point if you want a thicker soup***
Enjoy! :) |

Location: MN | We had wild rice, with rotisserie chicken, grape tomoatoes, red onion, feta cheese and that was all mixed together with garlic and parsley infused olive oil. Served room temp. It was quite yummy! I then thought of several different ways I could prepare it next time.

I soaked them in a salt brine for a few hours.preheated oven to 400 with my cast iron skillet preheating in oven as well.dried the chops.coved both sides of chops with olive oil ,salt, and pepper.when pan was preheated, removed and put on high heat, you will get steam and smoke when putting chops in pan.put chops in pan to sear on one side when they are seared on one side turn them and put pan in oven for about seven minutes.the chops will sear on second side in the oven.

| Last night we had boneless ribs slow cooked in a wine sauce. I made mashed potatoes and a gravy from the leftover cooking juices. Paired with a green salad and more wine :) Super easy and tastes pretty good! |

Tomorrow is "not sweet" sweet potatoes and grilling steaks!
I never did like the sweet potatoes with marshmallow/brown sugar and all that...but these are amazing!
Dice up a few sweet potatoes, coat in olive oil, season with S&P, steak seasoning (we also like Greeks), and if you like an extra kick Cajun! Bake at 400 for 25mins or until fork tender.....we sometimes add sliced zucchini, baby bella mushrooms and sliced red peppers. |
