I have a 4 yo and I have a corriente. It is a 7'' gullet. He is very stout and a little chubby but has average/normal withers. I currently use a 3/4 biofit classic equine and saddle seems a bit wide for him. I know he is suppose to fill out and grow some more.. Saddle tips forward a bit since its a little wide for him. Classic equine leaves big dry spots behind withers. I wanted to get my first 5 star but im still deciding thickness. Do you guys think a 1'' will be fine?

IMO if you aren't roping you don't need, or shouldn't need, a pad that thick. 5 stars are not going to pack down and compress like other pads. I have a 7/8" that I ride my barrel horse in and we rope with 1 1/8. Despite only being a 1/4" different in measurement there is a big difference in padding.
I would evaluate or have someone help you evaluate your saddle fit and decide if you should try and fix it with padding right now or look for a better fitting saddle.

Another thing. BIG DRY SPOTS ( As in size of your hand or bigger) are FINE.. Its the SMALL dry spots or ruffed up hair that can mean a problem. BIG dry spots , especially same size dry spots on both sides are A-OK/

Does your horse not have a top line built up behind his whithers? What is the reason for using the bio-fit pad on him? That could be why you are getting dry spots.

I got a Prof Choice Charmayne James with the built up area behind the withers, as my 3 y/o has bulging shoulders, but goes down to a "normal" back, and that has worked really well for us so far.

A 1" is really thick and I think it will not work going to be tight. I would go with a 7/8 or a 3/4.
