Tried him out yesterday, and we are a great match already! I'm so happy and excited. He is so responsive to my aids, and is a lot of fun to ride! They are going to be delivering him to the barn we will be boarding at tomorrow! He is UTD on everything!
As far as bits are concerned, I rode him in a Jr Cowhorse bit yesterday and he was great. She said he can also go in a snaffle as well.

Now to find a saddle, bridle, and breastplate!!
He is currently on the Fore Front supplement ForeBasics..and I was going to stay on it, instead of going with the ActiFlex, but looking at the ForeBasics Ingredients, it's 5,000mg of colostrum, 1,250mg of yeast extract, and a pre and probiotic blend. I don't want to change a whole bunch of things on him at once, but I know Actiflex is a good price for a joine supplement. What are your thoughts? It says the Fore Basics are good for trail horses, or off season performance horses. I was to put him on a great joint supplement since he's 15, and also for a decent price.
ForeBasics or ActiFlex?

I would keep him on the same feeding and supplements that hes on now, I would not change a thing. 
Saddle fit for him and you is very important, I would ask what brand of saddle and what bars it has that they are using on him.

We rode in a Dakota saddle yesterday..I sat on a Circle Y the other day at a tack shop and I liked it a lot! Does this mean I have to buy a Dakota?
She said she doesn't know if it's semi QH bars or full, she said it's a 2001 Dakota Trophy saddle.

As long as you got a good fit with the right gullet size, you can pretty much get what you like as long its a good fit for the both of you. You also need to make sure you get a good saddle pad with the right thickness, all my pads are 5 Stars and you can get the thickness you need in them. 5 Stars are a bit pricey but the will lasts for many many years.

Beyond!! I am not one to rush time away, but I'm ready for Tuesday night! The Fore Front supplement I'm going to keep him on, I can pick up locally! The company is based in VT, in a town about 20 min from where I live which is neat!

I wouldn't change anything until you've had him for a few months. Ride him for awhile and get to know him, then develop an idea of what you think he may need from there.

I'm going to see him tonight, so will get plenty of pictures! I went to the feed store yesterday to get a bag of what he's currently eating now for feed just to make the transition easier. I talked to his previous owner yesterday, and she said she has switched his food before cold turkey, but recommended I get a bag, so I did. I got his supplement she has been feeding also, so hopefully he will have a nice, easy switch.

Here are a few pictures! Not the best quality, but I will get more! He seems to be settling in fine! He's not used to being stalled much, as previous owner basically had them out 24/7. and when they were brought in, it was in a stanchion type stall. I will get more pictures soon when my hubby can go with me.

Thank you for your suggestion, but it was just a picture. My DH took the picture as I was in his stall grooming. Halter is always on when I am grooming or tacking up, halter comes off any other time.
