Mon Ami Gabi - sit outside on the patio, eat a yummy steak, and watch the people walk by on the strip and the water show at the Bellagio right across the street!  Also love the mexican restaurant along the canal inside the Venetian.  <<<  My favorite.  Eggs Benedict at the Grand DeLuxe inside the Venetian.  And - Serendipity near Ceasars.  Yep!  I pretty much eat my way through Vegas! lol

Mon Ami Gabi is my suggestion too for the same reasons.  Also the Italien restaurant at the Piazza in the Ventian Hotel.
We go both every time we are there.
We are foodies, and also splurge on a 4 or 5 Star restaurant.  I usually check out the different menues and see what sounds interesting.  We don't drink... so that helps :)

There are several decent places, but over the last 10 years or so Vegas has become more about the pretense and less about the substance.

So expect to pay twice what it's worth and unless you know someone your going to have to get lucky to get res. at anyplace worth going to.

for Steaks

Craftsteak is actually pretty good so is N9NE, Delmonicos is almost horrible.

Got some associates that swear Gordan Ramsays is good(I've never been

As far as anything else flip a coin and they are going to be about the same. I despise(would starve to death before I ate there) Tao so if your looking for upscale Chinese look elswere.

We always go to local hole in the walls off the strip, much lower priced and always good food. I can't remember any names, but we always just ask locals where they like to go off strip. Ellis Island always has great food, but it's not the cleanest place, it's "old vegas" style We hit a few buffets sometimes too, but they aren't as good as they used to be. One suggestion I always make to anyone going is to buy the American Casino Guide for whatever year it is, so the 2017 this year. It's typically around $12 to purchase and there's tons of coupons. Buy one get one free admissions to attractions like the Eiffel Tower and ride up the Stratosphere. Drink coupons, food coupons, free slot play, etc. You can find a list online of many of the coupons in the book to see if you want to buy it first.

Texas de Brazil, hands down! If you have never been to a churrascaria (Brazilian steakhouse) before, I highly suggest going! They usually offer coupons on their website, like buy one meal get $20 off the second (which is about half off), if you sign up for their newsletter. They usually have about 5-7 different kinds of meat, a huge salad bar, and a great wine selection.

If you go, you better go hungry! And don't fill up too much on the salad bar while waiting for the meat to come around to your table.

It's not on the strip, but not too far off the beaten path.

It is good, I've been 3 times.  First time was over the top good.  Next time - terrible service and I contacted them after I got home, which I rarely do but the service was that terrible.  Next trip I met personally with the assistant manager who assured me they take comments very seriously.  So I gave it another try and the burger was amazing and the service was great and I would recommend them again.  I'll go again next time I am there.  The fiesta burger is the BEST!

For a very nice expensive steak dinner....we have found SW in the Wynn to be the most conststent. We have always had a great meal and great service for the price. We have been to Prime and Smith/Wolesky's and they are good. However, those three are all priced about the same and SW is the better of the three. We also have been to Craft (Tom's from Top Chef) restaurant. It was very disappointing. I had a great lobster dish there, but my husband had a horrible steak. And it was expensive. It was so bad we actually wrote him. There is also a great Italian restaurant in the Galleria for lunch or an informal dinner.

Another vote here for Texas de Brazil.
When I read the title of your post, the first thing that came to my mind was that there were no great places to eat there. I found everywhere else mediocre, at best.
That's likely due to the area I'm from, though. The bar is set pretty high for restaurants here, so i expect a lot. We couldn't find a place with decent seafood.
Now, the shows, casinos and entertainment were all impressive. I just wish they could combine our food with Vegas' entertainment. Texas de Brazil was the only restaurant I was impressed with on our trip.

There is a burger place over by the Stratosphere that we ate last year that was wonderful. I can't remember what it was called. It had pretty cheap beer, too. $6 (I think) pitchers if a game was on.

YES YES YES, SW is THE BEST! Great dinner, fantastic wine list, and you get a show with dinner!
Other favorites include:
Javiers at Aria for Mexican food
Serrano and Jaleo run a close race for best tapas; Lago is 3rd for me
Joes Stone Crab in Forum Shops
Stack at Mirage
Trevi is great Italian food in Forum Shops with good atmosphere
Lotus of Siam is the best Thai food, but its closed right now

There are so many GREAT places to eat in Vegas, I would recommend something that IS NOT a chain!

I haven't seen Battista's Hole in the Wall mentioned yet. FABULOUS Italian food with great wine selection. Reasonably priced with a super unique atmosphere. Not on the strip, but within walking distance- and totally worth it! While you're here, check out all of the photos of celebs who have eaten there since they opened. Super cool!

I say Samba in the Mirage for Brazilian steakhouse over Tejas de Brazil and Foco De Chao.  It's cheaper and I like the food a little better.  The Mexican food place in New York New York is great.  I also LOVE Cheesecake Factory inside the Forum Shops at Caesar's.  We also like Coronado Cafe at South Point.  For quick food, In-N-Out Burger is great.
