Mock Brothers in Sand Springs all the way. They have a huge selection of new and used saddles. They also make very nice tack. And, Greg is super friendly.

The stock yards has lots of good shopping but nothing really as far as tack that I can think of...
National Saddlery has tack... pretty typical selection if I remember, but if you’re going down there to hit up the clothing/boot stores then it’s worth stopping by.
