Only one time, and I never went back to that person again..... 

But, I've heard of friends having this happen. Their reasoning was the horses were really bad and needed a lot of work.... I still don't agree with that as being a good reason myself.

I've also seen horses where too much was taken down. Bad news!

When my horses get their teeth floated I always give them a couple of days off, yes they can get sore and sometimes their gums get banged/bump by the file/float so I think its only fair to give the horse a few days off.

Yes, I agree with time off also. I try and get mine in yearly and they still often have a hook in there. The one I use now uses power tools and takes just a bit at a time and rechecks before grinding away again, but I still can see how they might be sore after.

With the exception of pulling teeth (eg wolf teeth), a horse that had really bad teeth that have already cut into their gums etc (they'd have been sore before hand though too), or a problem out of the ordinary no...maybe a tiny bit sensitive, but not sore. That being said I generally try to ride them first so they can have to rest of the day off.. If whoever was floating mine left them noticeably sore I'd be looking for someone new. Powerfloats with sedation are my preference for floating teeth though, so don't have as much banging around as a hand float without sedation can. Even then though, short of something happening, I wouldn't be expecting one to have a sore mouth if the job was done properly. That's just my opinion anyways. :)

Sometimes horses, especially older ones, can get sore more in their TMJ area from having their mouth open in the speculum rather than the actual teeth float. If it persists for more than couple days, I would call your vet.
