 Well...it seems that my SO is going to have to do a 10 day Gluten Free diet trial to see if that is what might be causing his chronic digestive issues.  (he is also having comprehensive blood work etc)  I am going to be the supportive partner and do the 10 day trial with him  (yikes).  So many things we CAN'T have...I'm worried this is going to be really hard.

I am working up a menu/meal plan for the 10 days.  I just know if we do not have a solid plan we will cheat.  I have a few good sounding recipes...but I was hoping some of you might have a favorite, fairly simple recipe to add to my plan.

I'm particulary stuck on what to pack for our lunches.  We both bring our lunch to work every day.  Saves money...and it generally means I will actually take the time to eat.

I recently got diagnosed with Celiac's disease and had to cut out gluten entirely. The first week was hard because I love bread. But I have found that any flour can be substituted with corn starch, quinoxa flour and soy flour. I wrap my burgers in lettuce leaves instead of buns, or just go without. Tater tot casserole is GF, and obviously anything with rice, except for soy suce has gluten in it. It's not terribly hard to be GF. If he's getting the blood panel drawn he doesn't want to be gluten free because he wants the anitbodies in his blood to detect the gluten intolerance. Just an FYI. I don't have any favorite recipes because I'm still learning as I go. Good luck.

My SO has celiac and it can be difficult at the beginning. When he went GF so did the whole family. It's too hard to keep things separate. Keep in mind that even if you wash your pans really well gluten can still be in the smallest scratch. GF Bisquick has been a life saver! I use it for biscuits, pancakes, pizza, waffles, desserts ect. We take our lunches to work also and it can be challenging. I try to make extra at supper so there is left overs for lunches. Meatloaf, chicken, ham and lots of salads! We also eat a lot of eggs! The best and easiest bread mix I've found is King Arthur brand mix. We live near a big town so our Wal-Mart and Meijer stores carry a good variety. Don't waste your money on premade bread, it's awful! There are lots of recipes online. I've had good luck with most of the Betty Crocker recipes. Good Luck!

Thanks guys.  Yeah it's Celiac that they are looking at him for right now.  He has already had the blood drawn...just waiting for results.  We will start the 10 day trial this Sunday.  It's going to be a challenge for sure.

My family is Celiac. You can still make alot of dishes and still be Gluten free. For instance.. your meat/potato/veggie dinners are fine. Turkey (no stuffing, or use g/f bread) Cabbage rolls, chili made from scratch etc.

Where you need to watch ingredients the most is dressing/spices/soups/sauces, that is where I get most of my issues from. As well as msg and Garlic sensitivities.

If you can find UDI's Gluten free products, they are WONDERFUL and really good. They have bread, bagels, pizza crust, buns. I have never not liked any of them. I have not found any other brand that I like though.

Google gluten free recipes and you will find tons.....so if you like chicken, beef etc just search based on that as well.
Is dairy out of the equation too? I know it can be part of celiac disease as well....

I've been GF for 12 years, sticking with whole foods and READING all ingredients is needed, you will be surprised what contains gluten etc. Udi's is a great brand, if you still want to have breads etc, rice pasta is great as well. With my cooking experience rice, coconut, almond flour are a different consistency and can't be replaced (cup per cup) to wheat flour in recipes. I'd stick to GF specific recipes on that, so it would call for a certain flour type quantity. Unless you buy an all purpose GF flour you will also need to buy xantham gum which is the binding agent (which is what gluten is in regular flours) for your recipes.

Gluten is NOT just found in wheat, it's also in rye, barley and spelt. Like Puddy said its in a lot of spices, sauces etc!!! Dining out...alot of restaurants do offer GF menus now.

Β We eat Paleo which is essentially gluten free. Β  There are great Paleo pages on FB. Β  Tonight we had Bison burgers (no buns) with fresh sautΓ©ed spinach and cauliflower rice which is surprisingly delicious- sautΓ© in coconut oil with a little salt and it gets a buttery flavor to it. Β  We eat sweet potatoe chips, don't know if that is gluten free, stuffed peppers with beef and pork, chicken cooked anyway we can think of, lots of veggies and meats. I use coconut and and almond flour, some recipes are better than others. The consistency is different. Β  Once you start eating like this it is really not hard. Β There are so many things you can substitute for the bad stuff, except chocolate - that is my one cheat :).

My daughter has Celiac disease.  I substitute things and it has worked well.  Meatloaf now has GF oats in it instead of bread crumbs.  Bob's red mill flour instead of wheat flour.  She really likes Udi's bread.  We just keep hers in the freezer so it doesn't spoil so quickly and she takes it out as she needs.  But as said above you will need xanthan gum.  Pretty cheap, I buy it in individual packages.  Just google GF recipes as said above.  You will be amazed!

Thank you all. I appreciate the advice.  I am definitely disspaointed to see all the things that have gluten in them that I would never have guessed.  I'm worried we will acctidentally screw up somewhere...despite making all the changes in what we think we are eating.

I'm putting together a meal plan and shopping list for the store tonight to get us started.  We will start the plan this weekend.  He is not thrilled about what he will be giving up...so i'm hoping to find good alternatives to things I know he likes...and maybe introduce him to some new things.  He has never tried hummus...I love it...and having that and veggies to dip in it should get his interest.  Lunches for work and desserts will be toughest for me to replace for us I think.  And I have to be careful to eat enough not to lose weight myself.

I went GF for a few weeks because i thought that was my digestive issues... ended up being caffeine and a few other items. Dominos has a really good GF pizza though it is kindof pricey.  Jimmy Johns has Unwiches which is a sandwich wrapped in a lettuce leaf.  Tacos u can stil make just use either corn toritillas or corn hard shells.  Here are a few recipes that i really like that are GF

 ETA  Tyson makes some really good GF Chicken Tenders.  Pilsburg has some relly good chocolate chip cookie dough that come in a tub that are really good! And there are also some really good GF frozen waffles! i frogot the brand though!

Betty crocker makes a good yellow cake mix... make this cake as it directs but add 1 package of vanilla pudding mix too it though to keep it moist!

Going GF doesn't necessarily mean you'll lose weight, so don't worry about that! Especially if you're buying all the replacements - they will do the opposite to you! Stay on the outer edge of the grocery store is my personal opinion...I only go in the aisles for things like coffee (which some flavored kinds have gluten, got to be careful) and for coconut milk, which I've used to replace coffee creamer. I have celiac and colitis, and have gone paleo to try and make my life easier. It's hard at first, withdrawal symptoms are a NIGHTMARE!!! I was a mess for a few months before I found what worked for me! Pinterest is LOADED with GF recipes, that was my best source. From there I found many bloggers who I started following for ideas. Betty Crocker has lots of dessert options (cookies, cakes, cupcakes) that are boxed - that's an easy solution right there :) Lunch can be hard, I used to always eat a sandwich...now it's meat with veggies and a sweet potato or something along those lines. Good luck, it's definitely a challenge...things like the toaster and pots and pans can cross-contaminate, you really do have to be careful!

I have celiac disease too. It is best to focus on what you can eat than what you can't.

As was mentioned above, udi's bread is good, so is Rudis. The lettuce wrap idea is great too, so are rice wrappers from the Asian food section of the grocery store.
Snyders makes good gluten free pretzels and there is a gluten free pasta by dellalo that my family couldn't tell apart from gluten pasta!

For lunch Ideas maybe everyone could pipe in with their favorite gluten free travel food?

When I'm hauling, or trail riding, I hollow out a cucumber and stuff it with chicken or tuna salad.

 If you have a smart phone download Hughes allergy scan. It allows you to input what you are allergic to. For my daughter it was wheat and barley. Then all you do is scan the barcode and it will tell you. My daughter was upset but when I started finding all kinds of substitutes and she couldn't tell the difference she quit being worried about never being able to eat.

These are some things that were GF that we could continue to use.

Near East Rice mixes
Maries Salad Dressings
Johnnys seasoning salt
Classico Spagetti sauces
Heinz Ketchup and mustard

A couple things I make that I really like are GF banana cinnamon pancakes and taco pie (with GF bisquick). If either sound good to you shoot me a PM and I'll type them out for you

premium gold gluten free flax and ancient grains flour has been my lifesaver, you can find it at costco and it serves as a 1 to 1 flour substitute. It tastes super good too!

Favorite desert is crazy cake (no eggs milk or butter)

Pinterest is your best friend for gluten free cooking, just type in gluten free recipes and if they have been pinned a bunch of times you know they've got to be pretty good. There's a lot of easy stuff on there to make too.

Pretty much, nothing in a box, nothing premade. You can still have M&M's!
