So I asked a question about a friend's horse out of this stallion not to long ago, but when I got to looking I noticed the stallion has really pale amber eyes. Does anyone think he could be champagne?

Dont know what color they are determined as. I had a Reg Morgan mare that had those same eyes.

I'm not really concerned with his registered color because all too often they don't match the genetic color. It's just interesting to me. I'm sure he's registered bay. I thought the creme gene could also cause this . . . (maybe a smoky black?). I have one of those but she's much darker.

I don't know either but there are a lot of FWF with amber eyes. I bred a sorrel mare (gray sire/sorrel dam) to a dun tobiano stud (dun sire/bay dam) and the filly came out sorrel with amber eyes. JLB has all sorrels way back other than his dam that is by a bay stallion. So going off his pedigree I don't see the potential for a cream gene to be present, but the amber eyes could be a genetic trait all of their own-hence the FWF with it.

No. He is bay. He just has weird, lighter than average, eyes. Not only can you tell by his pedigree, but of he were any sort of champagne, he would have offspring that were too,

It really depends on if there is a red gene hidden by both of the parents.  The expression of the dun gene is known by the dorsal AND striping.  Just a dorsal without the other dun factor characteristics is most likely just countershading.

His eyes look like a champane but his color is dark although they can be seal brown. This is my Champane buckskin, he has amber eyes. I wish I had a pcture of his eyes to share.
