Well the ground is funky here, and will be till spring. I'm carrying my daughters about an hour away, to ride at an indoor facility one day a week. We are there for a couple of hours. How can I maxamize this time? We are doing a good job of keeping their horses legged up. They go with me to check cattle a few times a week, just no barrel and pole practice.

We just ride in a disked field then do exhibitions and runs at local races.

If it is a finished horse, once a week in the pen is sufficient.  If it is a more novice horse you can set one barrel up in the pasture and bend around it at a walk and trot both directions between the weekly arena practices.  The slow work, done properly, is probably every bit as beneficial as full pattern practice in the arena.
