I have a mare that is slightly downhill. I use a Double J Lynn McKenzie with a thicker 5 Star Pad on her and she never has any soreness issues. Just be sure you choose a saddle that doesnt throw you forward. I have also seen people use corrector pads on some of the more severe down hill horses.

My boy is downhill and I have a Martin FX3 with flat bars and the stirrups hung more forward
(like on the new BTR by Martin
). Plus, for now I use one shim in front on top of my 1/2" 5 star pad. That seems to be working best for us.

sometimes if your horse is downhill might need to shim to ge the front of the saddle up.

Boy is this struggle real for me too! My horse is 6 and hip high as well. Not as bad as he used to be, but I too have struggled with for both him and me. I would get thrown forward in a run because when he turns, it exacerbated the down hill experience. HAHA I had a cutting saddle built with alot of front end in it, and that helped me. For other saddles, I shimmed the front, and I think that is important, especially if you have room in the bars of your saddle. On a whim I bought a Jackie Jatzlau treeless saddle and so far i'm really liking it on him. Haven't made a run yet, but looking forward to. It's the only saddle I have ever had that actually doens't roll on him and that I don't have to cut him in two when I girth him up.
Strangely, most of my saddles also run back toward his hip, uphill if you will, which creates an entirely different set of issues.
