Rockwall has fireworks on the water (Lake Ray Hubbard) and has a nice shopping center, eateries and a Cinema move theater. I've seen postings of some Barrels races going on - if you join some of the barrel groups on facebook there are all posted there. Personally, I would stay out actual Dallas, esp on a Holiday. Addison (suburb of Dallas) has Kaboom town, which is a big firework show.

I make the drive each year to Granbury to watch the fireworks over the lake. Great small town feel and awful pretty if you can rent a boat or get close to the water.
