 Location: Illinois | What are your favorite snacks and meals to make while on the road/ at races? We are taking a crock pot with us to the next race. My trailer doesn't have a stove. We do have a full fridge, microwave, and toaster though. Our griddle kicked the bucket and I'm going to wait until they're on sale before I get another.
We just butchered so we have a ton of hamburger, roast, and steaks. Anyone have any ideas other than stew? We are NOT picky. lol

     Location: OH. IO | Tacos are easy.brown the beef at home.cut up lettuce and tomatoes at home.put them in separate baggies heat burger in micro wave:) |

          Location: Texas | Taco soup ingredients travel easily. I brown the ground beef, freeze it with the chopped onions, and everything else is in a can (beans, tomatoes, corn) or envelope (taco seasoning, ranch dressing mix). Just throw all in the crockpot and cook. Don't forget the liners - they are real work savers.
Baked potatoes with Manwich sauce is a quick and easy meal. Add a little sour cream if you like it.

 Location: Illinois | Great ideas on the taco soup or tacos in general! Very easy. Itβs just two of us going so we could adjust it to how much we can eat. I want to try to eat decent on this trip for once. Itβs hard not to skip meals while at a busy show.
Trust me, the liquor and protein shakes are already bought. With these vet bills recently, the horses are leading me to drink. (Slightly kidding, slightly not) |

       Location: on the fine line between insanity and geniusness | I make cowboy beans. Super easy. Chop 1 yellow onion and 1 bell pepper and brown them in a skillet until about half cooked. Add 1 lb ground meat and cook until brown and veggies are soft. Add a can of rotel tomatoes, a can of ranch style beans and a can of baked beans. Easy peasy! Itβs better the second day! You can add corn and rice to it too to stretch it even more. Just pop it in the microwave when you get ready for it! Not the healthiest option, but it makes a bunch! |

| Your crock pot will be your best friend! Here's some things we have made in the past:
-pot roast
-fajitas (chop everything beforehand)
-goulash (precook and freeze the noodles beforehand)
-beef stew
-Salisbury steak (with cube steaks or hamburger)
-chili
-bean/lentil soup (with ham hocks or bacon)
-shredded BBQ beef sandwiches
I've never tried lasagna, but I have eaten crock pot lasagna and it was really good!
Plus salad stuff is really easy to bring, and it's always nice to have a good crunch! Macaroni/pasta salads are really easy to make beforehand and pack along! |

| Get 2 lbs chicken breasts, dump 2 jars of salsa in and cook on high for 4 hours/ low for 8. VOILA chicken tacos. SO GOOD! |

         Location: Bandera, TX | For breakfast egg muffins: Beat up eggs and fill in well greased muffin tin. Then drop in crispy bacon pieces, tomatoes, feta, and whatever else you like. Bake till set. They microwave well. |

| Breakfast Burritos. I'm a huge breakfast person, as long as I can have a good breakfast and some coffee, I'm fueled for the day!

  Location: Illinois | We grill a lot, we just use a small table top grill with a little propane tank. Usually chicken, pork chops, or steak. Plus you can just cut up veggies, dash with seasonings and wrap them in foil & put them on too. Bake potatoes in the microwave. This past weekend we did tacos, steaks, and chili for the 3 nights. Breakfast is usually egg sandwiches or pancakes. If you don't have a stove just get a pan to set on top of the grill and cook the stuff on. It's worked well for us. For lunches we just eat leftovers |
