Hooking Up New Batteries On My Horse Trailer. When I Try To Hook Up The Ground Cable It Sparks. Any Advice?

If there is anything hooked up on the trailer that draws current it's gonna spark when you hook it up.

Are you doing one or two batteries ?? If two batteries make sure you are hooking up the negative - to each other and ground wire ........>>> and the positive + to each other ..
The negative clamps should be removed first, then the positive clamps ...................>>>> and, when replacing the battery, you put on the positive first and then the negative/ground should be the last two clamps connected. This is essential, so that short circuits are avoided.

FYI: unplug trailer from any ac or truck hookups .. or your internal charger board will be active and you could burn it up ...

This depends of if it is a 12 or 24-36 volt system... One of the things that drove me crazy when learning to wire up trolling motors on boats. Some motors are 24 or 36 volts and when wiring up the battery banks for those you run wires from positive to negative and back to positive...
As far as the spark when you connect... There will be things you don't know about that draw electricity in small amounts... Like a radio... That used to freak me out too...
