 Could someone explain exactly what the side pots are at larger shows?  I am planning to attend my first big show at a Lucky Dog and am a little confused if I should also pay in for the side pot...

You make 1 run and are entered in several races, basically.

If you knock, you don't win anything though!   But you also don't have the chance to win if you don't enter the main race and the side pot.  You would only win in the main race.

And depending on what the side pot is and who else entered it.. you may not win anything in the main race, but still win in the sidepot.

Ah ok, I think I got it now!  It looks like there is just the open run each day with the chance to pay in for the side pots.  Also, at these big shows, can you just run in say the Friday night race if you weren't able to stay all weekend (obviously if I did this I wouldn't be eligible for average) or do you have to run each day?

You need to read the rules for this race... not sure since I don't know what race it is.  More than likely yes, but you would need to verify to make sure.

At big races, usually each day is its own race.
If you are only going one day, it looks like you can enter the Friday open and a sidepot for either youth, adult or senior depending on your age. I've won a good amount of sidepot money even if I hit the cracks in the main race.

I used to enter the side pot every time I entered a race, but have learned to check and see how many have entered the side pot. Many of the producers are taking out part of the side pot for themselves (which I don't think is right) so that takes a bite out of the purse. If there aren't many entered in the side pot it is hardly worth it. I have kept track of whether I would have won money in the side pots I didn't enter and out of seven side pots total I would have earned my entry fee back in only one of them. This was also while winning money in the open run.
