Having trouble with knowing what to feed

I have my one horse on alfalfa pellets, flax, and a mineral supp. My other horse won't eat the alfalfa. I was feeding him a grain milled local and he did fine on it he looked really good super shiney but I wanted him off of the molasses that was in it. I started feeding another feed from the same mill that was soybean based with oats and corn. He has hives every time he's worked and he acts like an idiot. What can I feed him that's very low key? I want something with very little fat and protein. Can I give plain oats or is that too much sugar?

My thinking is if it's not broke, don't fix it. I'm not a big fan of molasses but if a horse has issues like getting hives when on a certain feed, I have no problems feeding it if their appetite stays good on it. Their appetite and temperament will tell you what's working. I would also narrow down what it was in the other feed that he was allergic to. It could be the oats or anything else that was in it.

Try a different brand of alfalfa pellets? I read awhile back on here that the caking agent in some can deter some horses.

Some of mine prefer their alfalfa pellets with water, like cereal. Have you tried cubes instead?

We just switched all but one of ours to plain oats with DAC oil and a mineral. Everyone has held condition and they aren't bouncing off the walls anymore than normal coming back into work in the spring, in fact i would say my one gelding is more level headed, his allergies were the reason I switched and I think some of his behavior before may have been related to not feeling 100%. The last one will be put on it when he comes home to the farm in 3 weeks.
