We had wild rice, with rotisserie chicken, grape tomoatoes, red onion, feta cheese and that was all mixed together with garlic and parsley infused olive oil. Served room temp. It was quite yummy! I then thought of several different ways I could prepare it next time.

Last night we had boneless ribs slow cooked in a wine sauce. I made mashed potatoes and a gravy from the leftover cooking juices. Paired with a green salad and more wine :) Super easy and tastes pretty good!

Feeling pretty boring reading these dinner menus.  Last night I browned some ground beef and made a box of beef rice-a-roni, mixed it together and splashed it with soy sauce.  Took about 20 minutes.

Tonight it will most likely be spagetti

We celebrated taco tuesday in style with Lamb Tacos paired with some Buffalo Trace .... I detest the prepackaged taco spice and made up my own a couple years ago that we keep in a resealable shaker.

Lasagna Tortellini Soup is on our menu tonight

1lb browned beef
1/2 cup yellow onion
2 cloves garlic, minced
1 can crushed tomatoes
1 can petite diced tomatoes
1 can tomato paste
1 can tomato condensed soup
1 tsp white sugar
1 tsp italian seasoning
salt and pepper
3 cups beef broth
1 package (16oz) tortellini
4 tbs fresh parsley (optional)
Toppings: Grated Parmesan cheese

Tater Tot Casserole!

Tomorrow is "not sweet" sweet potatoes and grilling steaks!

I never did like the sweet potatoes with marshmallow/brown sugar and all that...but these are amazing!

Dice up a few sweet potatoes, coat in olive oil, season with S&P, steak seasoning (we also like Greeks), and if you like an extra kick Cajun! Bake at 400 for 25mins or until fork tender.....we sometimes add sliced zucchini, baby bella mushrooms and sliced red peppers.

Tbred, brown 2lbs of sausage (i like mild) boil 6 lg potatoes till 3/4 done.  drain water and grease off these and combine.  add two can carrots, 2 can stewed tomatoes a scoop of butter and 1/4 cup sugar.  simmer till your ready to eat.  serve with grands buttermilk biscuts.  trust me.... you guys will love this one.

We had steaks and mashed potatoes last night. Tonight will be Italian baked eggs - dump about 1/4 cup marinara sauce in a ramekin, top with 2 eggs and mozzarella/parmesan and bake until the eggs set! Delicious with a toasted baguette.
