Bonnet question & adding speed

When I purchased my 5 yr old gelding last year, he was running in a bonnet tie down so I have just kept him in it
("if it isn't broke don't fix it" right?
) but I am curious what exactly the bonnet is used for and if I may possibly benefit by removing it.
When I first got him, he was very stiff which all stemmed from needing his teeth done. I have got him flexing nice and he's starting to really come along so onto my next question; what's the best way to teach them to run on the pattern? This horse won a good bit on the track so I know that he can run but he just doesn't really apply it between the barrels. Even on the run home, he doesn't feel like he is running. I breeze him at home and he will run with me there, just not so much in the arena. Are there any drills I can do to help with this or should I just continue letting him take his own pace?

I have been taught the bonnet hepls keep their head level, helps them brace, but allows them to get their nose out to run.

I use a bonnet on a stiffer horse. A tie down can stiffen them up and a bonnet will not.
