Been riding a Deb Sibley for about 8 years. I love the forward hung stirrups. I'm looking for a quality saddle with a deep seat (I'm getting older!), and some kind of forward hung stirrup. Any recommendations??? Looking to stay below $3000, but name anything you think fits this description...THANK YOU!!!

The double J Pozzi Pro has a very deep seat and forward hung stirrups. I'm only 29 but suffered a major spine injury and my pozzis are all I can and will ride now. A new one is pricey, but there are always used ones on here very reasonable.

Look for a saddle with a flat seat, it will give the illusion of a deep seat. A Hadlock and Fox tree has a very flat seat and a wide front end. Check out that tree and look for a saddle maker to build you a saddle on that tree.
I have mine built on a Hadlock and Fox by Teskey's and that sucker is very deep feeling but I can still get out of it if I need too.
 You could look into getting a seat rig saddle so the stirrups move more freely as well. These saddles make it easier to get your feet in front of you.  Any maker should be able to make you a seat rig on a Hadlock and Fox tree.

These two saddles would be very similar to what you are used too. They are a little bit heavier than a sibley, but for sure a good option for you.

Try a Just B Natural by Circle Y.  The seat, comfort and stability of & in this saddle is remarkable!  It's a very "safe" and secure feel.

I love my Shiloh Contenders, to me they ride very balanced and secure.  They don't feel bulky or like I am perched up on my horse like some saddles feel like to me.  Plus they are reasonably priced compared to some other brands.  I love the Caldwells just can't afford the price tag so this was the next best thing.

I have a triple creek, I like it so so but it fits my good horse like a custom made glove so I make due.

The one thing I've noticed about forward hunt stirrups is that your stirrups need to be short enough to get good weight in them in order to keep your feet in front of you. I notice a lot of people on FB asking for forward hung stirrups and then posting pictures with their stirrups very long, which is the easiest way IMO to get your feet behind you. I bet if they shortened them up and got their feet under them properly they'd have a new perspective.

I ride a DS now...with a 5" cantle...wanting a deeper more angled seat, though I love the forward hung fenders. Plus, you must admit, the quality on the DS is very much a thumbs down...Panther Canyon saddlery has always been a nightmare to deal with...just my opinion...
