Please help me.  Im looking for ideas besides the basics which I will have.  I have a concession at a roundup club for all year for all kinds of events.  On barrel racing nights Im going to have like fruit parfait, and almond, cheese, and apple tray bc I know we barrel racers would like something light.  So any other ideas.  this weekend Im having homemade chicken noodle soup. 

By the way its pretty much a kitchen with stove and refrig. and freezer, along with other kitchen gadgets.

Keep it simple and easy for you.

We do walking tacos - crock pot of meat and the fixings.  Hot dogs, again, crock pot to keep them warm.  In cooler temps we do a soup or chili and for larger races sometimes we'll do a special like pulled pork sandwiches.

Then we have bottled or canned beverages and some candy bars.

 

IMO - if people are picky they need to pack their own food.  Most times I'm just glad a concession stand is on site so it's one less thing I need to worry about,

Add a little grated cheese to that walking taco and you have the perfect frito pie.  We made those 50 years ago at our little local playdays.  Still good.

Nachos-the plain type just cheese and chips, don't do the hot water hot dogs--grill them suckers! 

Big events-make a bbq meal--people will pay 10 bucks for a good meal, when they are trapped at the rodeo. Fruit goes bad fast--but sounds good.

I'd never had a walking taco before the Appomattox shows that have them. I liked them so much I started making them at home! They're rather gormet at home - at least looking - but they are so good! Hubb gets all excited for them when he sees me buying Fritos in the summer . .

We call your Walking Tacos here Frito chili pie and I love love them.. A good ole fashion hamburger is great to get and I love a good sauasge wrap, a sauasge wraped in a warm flour tortilla, I like them they are fast and simple.

We used to order pizza and had it delivered to the arena.  Simple and you didn't have to worry about fixings and such.

When I've run them, we've had good response to different types of soups, chicken and dumplings, and dried beans with cornbread. If you have refrigeration room - a couple of simple salads made up might sell. When I have the facilities, I've also done some plate lunch type items - lasagna or spaghetti, bbq, meatloaf. I only fix a certain amount of these items and when they sell out - they sell out. If you have room- desserts that can be individually portioned out and covered usually sell well. Bananna pudding, chocolate brownie delight, strawberry delight, or a simple fresh fruit cup already done up in a disposable punch cup with a lid.  I also try to have something gluten (wheat) free for those that need it. I don't make anything special- but it will be a soup or something that would work well for wheat free and anyone else too (soup/ salad/ fruit/ beans with cornbread that doesn't contain flour)

They freeze them ahead of time on small 2 oz condiment size cups with lids. Probably a better way to do that due to litter but extremely popular here.

The group I do concessions for actually gets upset when I dont do walking tacos/taco in a bag! So I make sure to have them on the menu each time. I also like to provide a cheap option, so do hot dogs also. The race next weekend has a high of 5 degrees, so we'll be doing chili. I did Chicken Pot Pie filling over biscuits last time and it went over really well, even though the recipe got runny on me. Oops :D 

I like to always have the staple (Tacos) but try to incorporate something different each time. 

 

We have also done ultimate nachos - regular tortilla chips, nacho cheese, taco meat, and fixings. 

If you have breakfast, egg bakes or egg bake casseroles have gone over well in our group. We have done breakfast burritos also.
