Norma (NJJ) does alot of baking, I bet she just might know the cake that you are talking about. Sounds really good
Have you tryed Google? I have found more then a few recipes for it on google, and they look really good too.

My recipe doesn't call for a brown sugar "icing" but it is very moist and goes really well with whipped cream (Cool Whip)
Mix together
1 Cup Sugar 1/2 Cup Crisco 1 egg
Mix in 1/2 cup warm coffee
Then mix in:
2-1/2 Cup flour 1/2 tsp cinnamon 1/2 tsp. soda and 3 apples (peeled and diced)
Spread into 9 x 13 pan
Top with a mixture of 3/4 cup brown sugar and 1/2 cups nuts (I use pecans)
Bake 30 minutes @ 350 deg.

My grandmother would bake 4-5 different apple pies for Rosh Hashanah each year One of my favorites was her apples and honey pie. Mmmmm
What do you mean "raw?" Is it not baked?
I make Apple bread all the time. It's very moist. My husband and the guys he works with love it
