We took the Hoover Dam tour and really liked it. If you want to do a whole day trip...I would go to the Grand Canyon. One of my favorite places on Earth.

We each got to pick a day's worth of entertainment. Chase picked the rides on top of the Stratosphere. We bought the endless ride armbands and got our money's worth! It was awesome! Of course we did the shopping show and could have done it for two days if we would have had some real $$$$ to spend.

Things that are on my list that are kid friendly are
Slotzilla zip lining, this goes right over the Fremont street
Ash meadows wildlife refuge
Lion habitat ranch
Ethyl chocolate factory, they also have a cactus garden that is all decorated for Christmas
Fire in the valley is a nice drive, Red rock canyon is nice as well, we have done both independently both within an hour of Vegas.
As people said Hoover dam, I do suggest taking the grand tour as you get to go to the bottom and see the turbines
