As I am getting back into barrel racing, and I have been reading the posts about saddles which I am shopping for. I have notice people talking about three numbers. I am highly confused on the meaning of the tree numbers and their difference. I would love to broaden my knowledge on their difference.

I assume you're not just talking about gullet width. Some makers have different numbered trees to specify different widths, shapes, etc. For example, the meleta brown in my signature is listed as the #2 tree because meleta brown has 2 trees, her original and the #2 which is wider and shaped differently. It's totally dependent on the individual company how their numbers work (if they even use them).
