What difference does the shape of the gag on a bit make?

My point in asking this question is I like my junior cowhorse (same as above except smaller and with a three piece twisted wire/dogbone mouthpiece), and I'm looking to add to my collection. So...would I be better off trying a different mouthpiece on my junior cowhorse (maybe smooth three piece? or chain?)? Or trying the other bit above? Or something else that is your "go-to" bit? That junior cowhorse is probably my "go-to" bit. I run a horse in it, I ride another in it at home, and I'll probably put my 3yo in it when I start him on barrels later on (he'll be in an o-ring up until then).

On those two bits, not much difference. The shape determines how much the bit can slide up but can deter how easily too. The more easily it slides up the more results you should get, but again, those two are not very different.
