How does everyone teach their horse to collect their body when riding them - making sure their back is round, hind legs are reaching under them, etc.
Also, does a nice headset come with the horse collecting their body?

Drive them forward into the bit.
True collection doesn't equal perfect headset, but for their body to be balanced, their head and neck need to be at a place where they can function properly. It depends on what you think is a perfect headset. If you think a reiner, low tuck type, is a perfect headset, then NO a horse doesn't need that for true collection.

I had to take some lessons to get my mare really collecting nice. I went to a dressage trainer and we spent a lot of time not worried about her face at all but rounding her back, driving underneath and 'toes in front of nose." It was a lot of leg pressure and for my mare a lot of transitions. She is more of a reiner so her headset and my gelding who is more English built look entirely different.
To many my gelding looks to be more collected but in reality my mare is.
