For the picky horse

I have a 5yr old who I'm starting to pick up the pace with. Now, here's my issue. He rides around well in an o ring, but when moving quicker
(like most horses
) he needs more. Hates a draw gag, hates a jr. Cowhorse, hates twisted. Quiet as anything in a smooth mouth o ring. What else can I try that's a little more then an o ring but for the picky horse?
TIA!
