Just got a new colt that is slightly underweight and needs to add muscle. I know the muscle will come with being rode consistently which was something he lacked from previous owner. I'm looking for something that will just help provide what he needs durning training without making him too hot since he won't be competing anytime soon. Right now were giving him SS all grain 11% protein, 3.5%fat just since that was closest to what he had been getting fed.
What would y'all suggest?

I would be adding fat. I add flax seed anywhere from 1/2 to a cup per feed, I also add a 1/4 cup of oil, I use canola, I do know that some people have differing opinions on canola due to the omega ratio. I will sometimes add probiotics, sometimes red cell if I think they can be malnourished. I generally will only keep them on the red cell about a month, and only give about half of recommended serving.

Protein is what builds muscle. Why do you think all these body builders drink those protein drinks??? I feed a 14% protein and a low fat feed to all of my horses. Broodmare, young horses, performance horses. Be sure that you are feeding enough feed daily too. My young horses are pretty big so they get the maximum recommended on the bag.

Protein does build muscle but they need a higher fat then 3.5 if they want to put on a lil weight. if you only feed a high protein and low fat they will become LEAN .. not add any thickness substance.. to them. 
you can do it alot of differant ways.. increase calories ,,, increase fat,,,, or stay on what you are on and add some better quality hay.. alfalfa even would help. this is just my opinion.. we all do things differantly.. I prefer high fat and calories..unless they are easy keepers..

I was thinking just adding healthy coat to his feed. Or omolene 200 they also make a SS 11/6 mix

 I would add some THE Muscle Mass to his daily feed. Inexpensive and effective. I start all of my horses on it. It just helps them to build muscle correctly without having to pound on them. I see results in 2 weeks but 4 weeks is a huge noticable difference. Also I like that it is a complete supplement so I don't have to worry about electrolytes or amino acids or vitamins to add.
